    Hi, I liked the way you made this chicken dish. I have a simple question and I would really appreciate your reply. Using the same formula and the same process, can we make other kinds of chicken dishes like Sweet & Sour Chicken, Spicy & Sweet & Sour Chicken, Lemon/Pepper Chicken, chicken Manchurian, Szechuan chicken, Mango Chicken, Honey/Sesame Chicken, General Tso Chicken, Chili Chicken and other Chinese chicken recipes? Can we follow the same steps, process or formula and just change the different sauces to make those different dishes? What I specifically mean is - can we skip the battering and deep frying the chicken in those other recipes and directly cook the raw marinated chicken in those different sauces? Is this something that can be done? Is this something that other people have done? Is this something others are doing? Can this succeed or would it be a failure?
    For example, to make Sweet & Sour Chicken, can I do it like this -
    Step 1. Marinate the chicken with the Sweet & Sour sauce and other spices
    Step 2. Heat oil in a pan/pot and put things like garlic, ginger, etc
    Step 3. Add the raw marinated chicken and cook the chicken completely
    Step 4. Add the onions, peppers and the sweet & sour sauce and cook until the chicken is cooked thoroughly.
    Can it be done like this?
    Please let me know what you think.

      Sorry for missing one of your questions. Actually yes you can. There’s no hard rules to cooking. You can cook your style of sweet and sour chicken. You don’t really have to deep fry the chicken. The way you’ve listed looks doable. Try it and let us know how it turned out.

      Hi Blessed One. I’m not Cooking Ah Pa - is it ok? Let me answer your questions nonetheless. Qn 1 - yes you can. Qn 2. Huatiao Jiu is Shaoxing wine so you can use that. Please do not use vinegar as they are different. Hope this helps. Happy cooking!

    Just sharing: my MIL always told me not to add water to chicken cooked this way. Cover it when it’s in the wok And let the chicken juice be released from the heat. I’ve found this to be true that chicken is more flavorful. Of cos it’s drier.

      I'm thinking about using dried shiitake and using the soaking water (cos i hate tinned mushrooms), but I'm guessing as long as you have a good chicken stock you can get away without the mushroom brine (might need to add some salt if the brine is usually salty?)

    you can try adding brown sugar instead of white. It will thicken the sauce and it taste more flavourful.

    Hi, is chinese rice wine the same as Shao Xing Wine? Can you let me know what brand do you use for the wine?

      Hi Vernise. They are different. Chinese rice wine looks like water. It’s clear whereas Chinese cooking wine or Shaoxing wine is brownish in colour. Like whiskey. Hmm can’t remember the brand of our wine cos we’re out stationed for work now but look at the ingredient content - go for those that have lesser salt. Hope this helps.

      Haha actually no. The other one doesn’t have actual measurements. All agaratipn (estimation). This video has proper measurements to help those who don’t like estimation. Both are equally tasty.

    It's one of my favorite dishes at the Chinese chap fan. Thank you for teaching us how to recreate this at home. So beautifully and simply explained.

      Spice N' Pans It's the baked beans dish...it's normally used for Western breakfast. But the Chinese have a special way of cooking it for chap fan. I sometimes see eggs in it, sometimes it's plain etc. I hope I'm making sense. It's a regular feature at chap fans, at least here in Malaysia.

    What's the difference between hua tiao wine and chinese cooking wine? Chinese cooking wine is the one that is clear right?

      Hi Amanda. They are the same. Chinese cooking wine is brown in colour. The clear one that looks like water is Chinese rice wine. Hope this helps
