    Looks delicious, very Xiamen 厦门 style. Hard to find this dark red sweet style recipes like that, most online recipes are a bit bland, no color or strong ginger flavor. Can't wait to try this tonight, but how would you translate young ginger in Chinese? 生姜? 洋姜?嫩姜?

    i think the young ginger need to soak with salt water and drain it out dry and later only stir fry in wok
