If you're a guitar player, YOU NEED THIS PEDAL!
The Joyo R-07 Aquarius Delay is a multi-mode digital delay pedal with 8 digital delay effects:
    1. Digital
    2. Analog
    3. Tape Echo
    4. Tube Echo
    5. Reverse
    6. Low Bit
    7. Galaxy
    8. Mod
Every one of these delays is a flawless representation of the classic sounds you need (Low Bit, Galaxy and Mod are their own super cool sounds), and all respond to the tap tempo exceptionally well.
One of the coolest features is the looper. I'm not a big looper pedal guy, but I'm working on it! Unlike other multifunction delay/looper pedals, however, the Aquarius allows to use the looper and delay functions simultaneously, so you can record and loop your 5-minute song with a different delay on each take, giving you unparalleled sonic depth.
It might actually be a perfect delay pedal.

Joyo aquarius vs joyo d-seed 2 which one is better?

"Better" isn't the right question. The D-Seed II is a true stereo pedal with a ping-pong effect as an option. The Aquarius is more compact and has a longer looper time (5 minutes vs. 3.5). I happen to like the design of the Aquarius better myself. Really your best bet is to read up on the features and compare what's best for the music you want to make.

With that price tag, what's the catch (if there is one)? Is it just that it doesn't have a stereo output?

That is part of it. But one of the things that differentiates pedal pricing is the "boutique" level and brand name. Most expensive pedals come from boutique makers who hand-build each pedal. It's impossible for them to get all of the parts this cheap, and they invest a lot of time into each unit.
Larger builders, like Boss, will have a factory deal (usually their circuits come from China anyway), so their price per unit is much lower. But, they have the longevity and reputation to be known as a "good" brand that can be trusted. Their market is also mainly the US, Canada, and Europe.
Joyo is a "budget" brand, which means they source their circuits directly from the manufacturer within China. (Their main market has also been Asia and Indonesia, with a little trickle into Europe as Harley Benton).
It costs next to nothing for the components and infrastructure to build them quickly and cheaply. Because they OWN the means of production, they don't have to lease the manufacturing, so the cost to build is much lower. They're already producing the circuits, chassis, and the tools to build them.
In the past, Joyo's "vintage" J-series pedals were all based on replicating vintage tones. That's where they built their business; to the point that now they can innovate their own tones and models. That's how they keep prices down

I had to stop using Joyo pedals, including this one. Not only do they draw too much current for most power supplies, but they have major issues with processing signals with other pedals, regardless of where you put it. All the lights and nonsense draw way too much current, which can create issues in live situations. Turning off the lights with the switch on the back helps them work more consistently
