Have you tried them blackened? We found the blackening recipie at the end of this article fishtalkmag.com/blog/fishing-sea-bass-chesapeake-bay and then made into fish tacos was awesome. Also, bleeding and icing them good does seem to have a big impact on how they taste.

What’s the bait your using ?
We were using a mix of cut menhaden, and cut gizzard shad. They seemed to like them equally.

The river is just PACKED with them in this area - get here, and you'll get 'em!!!
