In addition to bleeding them a 30 minute brine soak works wonders. Pulls any remaining blood out of the fillet, firms up the meat nicely, and gives a little seasoning to the fish. Grew up preparing channel cat that way, it really does make a difference. I fish catfish 3 - 4 days a week and i've had no luck with blue cat. I get channels all the time, running Carolina rig and cut bait, but all I get are channels. Must be holding my mouth wrong.
