  • Let’s elevate the breakfast/lunch game with these Savory Tortillas using marinated shaved Tofu, Mushroom & Spinach! We’ll indulge in flavor-packed adventure with tender, marinated tofu as it meets golden-brown button mushrooms and vibrant baby spinach. A dash of vegan cheese adds a creamy twist that'll keep you craving more. From searing mushrooms to crisping tofu, each step is a journey.
    Crafting these tortillas is a breeze, and the optional toppings you can add are endless as you make these your own and take this dish to new heights.
    Savory Tortillas with Tofu, Mushroom & Spinach (Breakfast, Lunch or Dinner)
    Ingredients:
    2 (6-8 inch) tortillas
    150g extra firm tofu (about half a block), thinly sliced
    150g brown button mushrooms (a handful), sliced
    Handful of baby spinach
    Small handful of shredded vegan cheese
    Olive oil
    Seasonings:
    1 tsp cracked black pepper
    ½ tsp turmeric
    Pinch of granulated onion
    Pinch of granulated garlic
    Pinch of chili flakes
    Pinch of black salt
    Optional Garnishes:
    Diced green onion
    Sriracha
    Avocado
    Instructions:
    In a mixing bowl, gently toss the thinly sliced tofu with a drizzle of olive oil, turmeric, chili flakes, granulated garlic, and granulated onion until each slice is evenly coated. Set aside.
    Heat a skillet over medium-high heat. Add a touch of cooking oil to the skillet and arrange the sliced mushrooms in a single layer. Sear and sauté the mushrooms for a couple of minutes until they develop a golden-brown hue around the edges. Push the mushrooms to one side of the skillet.
    On the other side of the skillet, add the seasoned tofu slices. Cook for a few minutes until the tofu edges become delightfully crispy and golden. For a delightful eggy note, sprinkle a pinch of black salt over the tofu. Stir frequently to ensure even cooking.
    Once the mushrooms and tofu are cooked to perfection, transfer them to a plate.
    In the same skillet, place a generous handful of baby spinach. Stir and gently heat the spinach until it wilts. If needed, introduce a bit more olive oil and a pinch of salt to enhance the flavors. Transfer the wilted spinach to the plate with the cooked tofu and mushrooms.
    Turn off the skillet's heat. Warm the tortillas in the skillet for a brief moment.
    To craft the tortillas, distribute the cooked tofu, mushrooms, and spinach evenly over each tortilla. Sprinkle a modest portion of shredded vegan cheese on top.
    Cover the skillet with a lid to allow the vegan cheese to melt gracefully for approximately one minute.
    For an extra touch, adorn the tortillas with diced green onion, a drizzle of sriracha, and slices of creamy avocado.

    Proud to say, my pressed Lion’s Mane steak was fab. My shroom scallops were slammin!
    Tried the pressed oyster mushroom chicken sammie…EPIC FAIL! 🙈
    Should never try to cook when I’m brain dead tired. But, undaunted, will try the tofu breakfast sandwich before I give the chicken another go. I will not be defeated by a mushroom!

      I totally agree with the Lion's Mane. Bought from Marvellous Mushrooms, had two generous crops. Now hoping for a third, although I've certainly got my monies worth. Derek's Masala steak recipe is now my favourite dish ever!

    Loved this! I added a pinch of smoked paprika instead of black salt to mine and oyster mushrooms because it's what I had. Yummy, simple and fast recipe perfect for utilizing my cast iron pan.

    Finally got around to making the breakfast quiche; the one you did piror to leaving Frankie to go Stateside
    really enjoyed the concept of how you take firm tofu crumble it, add vegan mayo, and BBQ favored nutritional yeast... my goodness it was like "scrambled eggs"; it doesn't per se have much going on, but if you'd put thinly sliced or miniced habanero to it makes the "scrambled eggs" quite interesting and delicious after either baking them or use it to make a fried rice dish..
    didn't add the black salt though, but was delicious and wanted to experiment a bit more, so recently did the same thing with the "scrambled eggs" , but made a pineapple awesome fried rice dish; sorta had a fight for leftovers though because both my mom and twin brother enjoyed it...

    You are a culinary visionary winner I believe even though uve been around for awhile ur the one starting a revolution when I think about the food industry where now chicken can be formed in a Petri dish I saw on the news that some restaurants and stores even though they have to tell u on the packaging and it probably is good but I don't want a laboratory project dinner lol so if there is a group out there called the I'm not eating that I'm a part of that group ur food is the only food I've seen so far that makes me want to walk away to plant base and ur killer with those tongs. 🍜🍝🍾

    Looks zesty and delicious! Just curious, how do keep leftover avocado halves from oxidizing? I usually invert them into water in a little bowl, but they become mushy after about 1 day.

      Vitamin C prevents oxidation. I spread a little lime or lemon juice over the cut surface with my finger and keep it in an airtight container or plastic bag, it keeps for a couple days that way.

    This a a definite "Must Make" 😋🤤. As always LOVE seeing Frankie 🐾🐾🐕🐾🐾 (aka Ma. America 🇺🇲)❣️. I really enjoy using the cast iron 🧇 pans but unfortunately in the beginning I screwed one up and can't get it clean ⁉️. Requesting a video help on cast iron skillets and what do you do when you screw one up🫣. Help 😞. Thanks for another awesome video 💚🌱

      You cannot screw one up, just scrub down remove any tarnish or rust and reseason over and over again with each use . There are tutorial videos on TH-cam of how to season. i'll work on including some tips in the future. thanks for watching.

    Made this tonight after looking forward to trying it. Safe to say I won’t be cooking tortillas this way again, don’t know if yours were a certain type but mine burned underneath pretty quick before cheese started to melt and then they were hard. Ended up throwing all ingredients together back in the pan and putting it on soft tortillas with hot sauce. Hope others have better luck.

    Cast iron all the way. My husband has had his 40 plus years. Well seasoned. Don’t ever mess with his cast iron. In fact when I first met him he would not allow any meat to ever be cooked in them (he was vegetarian). Because I change to his lifestyle, it made it easy for us both to go vegan. This is a very doable recipe even for me.

    Hey Derek, what sriracha alternative do you like? The shortage for the original brand is hitting home, I like Kikkoman's but its more a smoky bbq style than the OG style. Any recommendations?
