We loved Quebec City! We knew it was quaint and historical and that French was spoken. I think we were surprised that French was spoken so much and that signs were not in both French and English, since most Canadians speak English. However, we were also pleasantly surprised that almost everyone seemed delighted to speak to us in English if they could, and were exceedingly friendly.
The province is 80% French, roadsigns are in French except on federal infrastructures (some bridges), the official language is French, the education system is mostly in French. Some First Nations also have public and official use of their language, at school and on roadsigns for example. Notably the Cree and Inuit.
Too many to count. It’s funny, because I don’t particularly LOVE ice cream, although I eat it when there are no pastries around. But all the people I travel with love it!

It seems that Britain conquered the land, but the French prevailed in Quebec.
