Einkorn is definitely a different breed of flour all to itself. I have recently learned to make tortillas with it. It took me several tries to get them perfected to the way that I really want them, but this recipe will give you and excellent idea of what the dough should be and feel like. I then moved on to making biscuits. After I watched several videos over and over again, I went to my kitchen and got to work. They actually turn out really good. The tortilla recipe comes from a channel called "gifts from the father", and yes the teacher is a very young girl about twelve. The biscuits are on a channel named "Cheryl Townsley". They are both easy to do recipes that I have needed to learn from.
I am 80 yrs. old, I have been baking bread since I was 23years old, and grinding my own wheat since I was 27 years old. I use all kinds of wheat, I very rarely use an all purpose white flour. Usually only when I am teaching grandchildren how to make biscuits. After they know how biscuit dough is supposed to FEEL we switch to other flours. Once you know how dough should feel you just work towards that no matter what your using. Adding a little more flour would have gone a long way to make your rolls look and taste like a " traditional" roll. In most cases a recipe is a guideline, you are free to make any adjustments you want. When I was a kid our next door neighbor adhered to a recipe as though the world would stop if she didn't. Cookies could be anywhere from raw dough to crispy black.
Try the eincorn flour with a simple trinity bread recipe 3 cups flour, sugar, 3 eggs 3 tsp baking powder add milk to consistency the rolls you made were and bake in a beaten at 350 for about 1 hour and butter the top immediately out of the oven like you would dinner rolls. Heavy bread but not sweet and great warm with butter or butter and honey. Will mold fast so eat within 48 hours. Used to make this daily for my grandfather and I on the farm growing up.

Not really a Christmas dessert tough, it's just a dessert in general, at least my family made it sometimes, not necessary during Christmas times.

I think the roll’s dough turned out sticky because the grain was coarsely ground. It takes longer for it to absorb water. Try to mix coarsely ground grain with maybe about half amount finely ground grain and maybe also let the coarse grain soak a bit longer in the water. If a dough becomes crumbly, it’s usually due to low gluten level grain. You need to mix it with a stronger, fine flour if you want the bread less crumbly and to rise better, thus increase the protein level, provided that gluten is well tolerated in your family.

I also make eikhorn bread by grinding the wheat berries and it’s very much like corn bread consistency.. super delicious with butter and raw honey
The key with einkorn is to wet your hands and then work with the dough.
