Thanks, I forgot about the monster sized dim sum at Cindy's, still wheeling on carts! The homemade Hum Sui Gok look good too! Watch out! I had a drop of hot oil fly into my eye last week. Could have been blinded! Need to wear goggles. I wonder if it would work in an air fryer.
We usually go on weekdays and I have never seen them use the carts before. That one lady in Thailand who is famous for her oyster omlette wears goggles when she doe deep frying. Maybe a good idea. I'm pretty sure it won't be as good as deep frying but probably still pretty good. Certainly save the amount of oil used, less clean-up after and no exploding dumplings into the eyes. Wheat starch has no protein and gluten.compared to wheat flour. It is usually sold at Asian or Middle Eastern groceries. Some regular supermarkets have it in the Chinese food section.
@@patsysparklingeyes9326 It's just called "wheat starch" ! Most brands available are Chinese. Depending where you live, most big cities with Asian stores have it. Even our local Walmarts and Superstore have it. Usually $1 - $2 a bag. You can substitute corn starch but have to use less as it has a different texture and thickening properties than wheat starch. Corn starch is crispy, wheat starch is chewy. Don't forget the glutinous rice flour, usually in the same aisle!
