Mark, there is a really diverse cuisine in Sai Gon. I think it would be better for you to have a tour guide who can take you to really local food areas rather than tourist hot spots. Also make sure you try the rice with mussels, Saigon is really famous for the particular dish.

I don't mind Vietnamese food; often on hot days my family and I will make our own fresh rice paper rolls filled with prawns or BBQ Chinese pork, plus the usual vegs & herbs. My aunt is married to a Vietnamese and I know how good some of their dishes are. I particularly like their rice noodles almost similar to Philippine noodles we call Pancit and their version of the Philippine Lumpia aka Egg roll.

Make sure to get bun xiao ( Vietnamese crepe) for a late breakfast. You'll love wrapping pieces in herbs and lettuce and dipping in fish sauce and chili.

Chợ Bến Thành closes at night but the night market will be around :) As a Vietnamese, I highly recommend you to do some research for some "secret hideouts" for snails; GREAT and adventurous taste for non-locals. Bến Thành does have some stations that sells snails but very pricey! Whereas those "secret hideouts" around the city will offer many dishes for less amount of money :) I hope you have tons of fun! I currently reside in the USA so watching this video reminds me the crowded atmosphere of Saigon

I suggest whatever food you see at the street vendors you try. (if it looks good) i'd suggest also to try and visit a monk temple to try out their food also.

Do visit their Ben Thah market in the morning, less crowded& lower prices as their are usually not much of a tourist crowd. And must try their Phò beef noodles at one of the stalls near the wet market in Ben Thah, it's really good especially with its coffee!! Oh and the hotel you are staying at if you walk down straight there is a wonton stall near the roadside opposite a hotel that is called New Pacific Hotel its wonton noodles are great too! Hope this helps and enjoy your stay in Vietnam!
I visited family there just this year! I recommend bánh kẹp lá dứa, bánh beo and especially bánh khot! I hope you have an amazing time in Saigon! The market you were in also had many good food and desserts.

Mark, if u have a chance I recommend you go farther down to the southern Vietnam which is delta mekong. It should be a wonderful trip for u to enjoy food. You can enjoy fresh air and fresh food at the same time, especially going to float market, tropical fruit orchard, or rural restaurants. There are some amazing natural food that im sure u have never tried them before. Definitely you will have a fantastic unforgettable trip there, i think...!:)

I'd recommend you to put some drops of soy sauce on the sticky rice, that's what we do traditionally (yet to be honest, I still think the rice is too bland, that's why I came up with my own recipe of Chicken & Sticky rice^^). Also the food at night market (around Ben Thanh market) is not that good, and usually expensive, cuz their targeted customers are foreigners (so the owners tend to overcharge).

Mark! Finally u made it to my hometown. I suggest you to go to "OC Dao" 212/C79 Nguyen Trai Street, Nguyen Cu Trinh Ward, District 1. Not too far from your place. This restaurant all about shells and seafood. It's the most famous snack food in Saigon. U have to try the octopus tooth stir with garlic butter and order some bread to dip to the sauce! I bet you won't be disappointed! Waiting to see it in your channel :x
