I recently stumbled onto your videos and probably watched about 100 of them in a week's time lol! The great thing about you Mark, that is different from the majority of food bloggers, is that you are always so kind and humble to the cultures and especially, the people you meet. You may not fully understand what the dish is, and some times you may even dislike it a bit, but you are still respectful of it. This is why I love Andrew Zimmern also, because you both may not know exactly what you are eating nor even "understand" fully what the dishes are made of, you still are very sincere and humble. You seriously need to get on TV man!

Your sound from the video is great.Hahaha, True, 100. But really his fans get hooked to his adventures. And Mark is soo obsessed with his food. Really funny to watch. We laugh our butts off. Mark sounds like a professional food critic. He only compliments the food, but he goes to great places. He soo much enjoy and appreciate every bite of it. Very convincing. According to him, you have to travel for the food. And I am afraid, he is probably also right about that.

Mark, the reason why your videos are so addictive is because of your love and passion for food which shows when you eat them. I like watching you swirl your head and make facial expressions which viewers use as a cue to rate the food which wouldn't have been possible if your reaction was muted or subdued. I kinda feel that I can almost taste the food myself that you feature in your videos. Way to go and keep it up.

this is literally 100 yards from my home. I'm in Japan now and watching this is making me reminiscing about my days in Vietnam. I used to skip morning classes just so I can buy a box of rice here - sometimes for my friends who are also enthusiasts of this dish (in Vietnam school lasts from 7am to 5pm and you can't get out of school during lunch breaks). thank you for being to my country and advertising its cuisine to the world.

    Hi Mark,
I'm Vietnamese, but I'm living in United States now. I'm 17 and I've spent 15 years in Vietnam. Because of getting away from Vietnam not for so long, so I'm kind of remember everything in Vietnam, especially THAT , Cơm Tấm Ba Ghiền . I ate at that restaurant a lot and it tastes real good . I saw your video so suddenly that it reminds me a lot about my country . Then I started to see almost all of your video about Vietnamese food . Thank you Mark , for all of your compliments for my country's food . I really appreciate that . Hope you have a very nice trip in Vietnam ( well if you're still in Vietnam )....and be careful of the traffic ( trust me, I love my country but,..)
    Love,
    Thy Pham

Time spent well in Ho Chi Minh :) My friends said they were glad I was around to take them to all these places, otherwise they wouldn't have known! We went on a little food safari and loved them all, thanks Mark! :)

Mark, the "meat loaf" item you're talking about is called "chả trứng". It's made of ground pork, small glass noodle strings, egg (which is the yellow surface). Which are then steamed in a container that's not unlike one that's used to make the American meatloaf.

that egg was cooked to perfection. I am sure a lot of people master the pork chop, but few master the egg. I was just wondering how we get food from Com Tam Ba Ghien to New York, Paris, Frankfort, London and and and?
For some stuff, we have 3D printers, now we need 3D cooking. I am thinking about a restaurant that prepares food according to TH-cam specs...ty, chris

just try any vietnamese restaurant. It should be under Cơm Tấm (they should have 2 to choose from, special and regular. The special includes one egg and other condiments such as the egg and the meatloaf). Try around and find the perfect Côm Tâm in your location.
P.S they already invented 3D cooking printer (they haven't found a way to heat the food but they pre-make pizzas (macaroons, pasta etc) and all you have to do is cook it. look it up) :D

LOVE this dish. The pork is so delicious with all the accompaniments. Drooling. BTW, the way I'd eat it is to break the egg and allow the yolk to drip over everything. Dowse it all with the fish sauce and take a big bite with everything in it (egg, pork, meatloaf, etc....the perfect combination).

This place was near by my childhood house, and now I'm living at the U,S. But I still miss Com Tam Ba Ghien, it was so good, no other places "Com Tam" are better than this restaurant. It's established over 10 years and I ate that seem like 2 3 times/week when I was there. And also I really love your reaction when u taste the food, I know Com Tam Ba Ghien is so good, I will do the same thing as I eat it :) since I watched this video, I know you are interested to it. BTW, the yellow thing on the "meatloaf" is the egg yolk. In Vietnamese, we called it 'chả chưng ' I'm glad that you enjoyed our Vietnamese food. I'll try to remember what was my favorite food in Vietnam so I can recommend you to go eat it ^^

Great video. This dish is my absolute favorite at the various Vietnamese restaurants in Phoenix and Tucson. The one advantage with the broken rice is that it captures the grease and the juices of the pork chop. In some places in this area, there is a tendancy to overcook the pork chop.

Mark, thanks. you're making me very hungry. Thanks goodness we have a lot of Vietnamese restaurants in San Diego. I'll be in Bangkok on Feb. 10 eating street food and that is also thanks to you for making me wanted to do that. A month in Thailand should be good enough to hit most of the places you have recommended in your video.

Mark Wiens Thank you, Mark. I will enjoy all those good foods, especially Kua OV. A must place for me to visit. My coworkers couldn't believe I am taking a month off just to do this. As soon as my boss mentioned we will be slow for February and March, my vacation request along with the flight was on his desk . Opportunity does not come often. I told my subordinates try to get along without me for a month. My others coworkers just can not believe my boss let me take a month off.

    • @MarkWiens
      @MarkWiens  10 ปีที่แล้ว

Lisa Elliott Fantastic, enjoy your trip! Try to go to Krua OV about 11 am or so, so you have the most choice for food. I'm not sure if they will have the "khao chae" as it's a summer dish, but they will have many other choices.

    • @lisaelliott3246

Mark Wiens I went here based on your youtube.
The meal was good - we got the dish with everything and it took an effort to finish it all.
The dish is now 88,000 VND - I noticed our dish also had a Chinese sausage in it. Coke was 12,000VND a can with a glass filled with ice - so all up 100,000VND each.
Not cheap by VN standards - but as your video pointed out - the quality was hard to beat.
We got there after the lunch crowd at about 3pm and the main seating area was closed but the remaining area was pretty busy with people coming and going.
Look forward to trying some of your other recommendations when I next make it to Saigon.
