I’m drying out for 90 days to start the new year and I found Hop tea a “decent” substitute as well to go along with na beers and hop water. I found Hoplark at Target. Only downside you have to buy individually at the store or bulk online. 39 days to go. Cheers.
Yeast uses the Zymase enzyme to turn glucose into ethanol, but it also has the ability to produce other enzymes. I recently found it makes an (unknown) enzyme which ferments chlorophyll into Diethylamine, a basic amino acid. It is a very interesting and useful organism, and we've barely scratched the surface of its capabilities!

Might do a few small batches first to "test the waters" but all in all it seems definitely good to have something like this, not as an alternative to beer (I don't think it will scratch that itch) but as an alternative to soda which just gets nasty after two glasses to my taste
Mineral profile makes a huge difference in plain seltzer. I haven't made hopwater yet, but I imagine minerals would have a huge effect. Maybe moreso than with plain water even.

You should use a counterpressure filler to bottle force carbed hop water. That way you dont get interference from the yeast.
