I CANNOT believe that you just made cucumbers & vinegar like I ate allllllll my life!! I was born & raised in PA, near Pittsburgh. My mom always made these with meals..esp when we would have sweet yellow corn on the cob in late July & August. What a great thing to see again!! I thought it was only us who ate these!! These are delicious!! TY! ❤

There are quite a few things that I thought were things that my family just did or made. Pickled cucumbers and onions, macaroni and tomatoes, slumgullian (goulash), hamburger steak, butter on saltines... Those are just a few. My family was from Pitcher, OK. They moved to California when my mom was 8.
This is a great and healthy way to eat cucumbers from the garden, especially when you have a bunch. We enjoy making this similar recipe to get our daily dose of vegetables in. Looks like we eat similar things. Keep up the great job!

Yes, we put tomatoes in it too sometimes. That is the beauty of it, you can mix and match different things. Regular pickles have sugar in them, it just helps cut some of the acidity from the vinegar. You really can't taste it much. Man thanks for stopping by. I hope you are doing good.

Im a Filipino and fruits with vinegar are the best, Watermelon, Mangos and Cucumbers are my favorite, especially Watermelon cus it has a sweet taste, then for Mangos its sour and the salt balances it
Yes they are good with other veggies too. These are not the true quick pickles in the since but some ppl call these that so that is why I threw that in there lol. I love both types though honestly. These are really really quick to make and make a great side dish to just about anything.

I used to think this was something only my family ate. I come from a mixed race family so we all have a different way of eating it but they all start with a simple base of cucumbers, vinegar, salt and pepper. My mom is half black and korean her dad eats it with kimchi, her mom eats it plain some of my aunts and uncles are half haitian and they eat it with pikliz, my dad is mexican he adds tajin or just eats it plain and I was the first one in the family to add a packet of orange kool aid, my younger siblings eats it the way I do with the tajin and orange kool aid and my mom eats all versions but it depends on what we have in the fridge or cupboards at the time

About 98% of the time, that’s how we make ours too. We eat them a few times a week throughout the summer when garden grown cucumbers are coming off the vines.

Yes love done Visalia onions. The real o we are seasonal though. We use red onions or white onions sometimes in this dish if we can’t get sweet or Vidalia onions.

Please forgive my dumb question, but the " 1/2 fresh squeezed lemon juice " is confusing to me. Is it simply the juice from 1/2 of a lemon, or...1/2 (cup?) (Tablespoon?) of juice from a lemon, not a bottle?
There really is no time limit on how long. They are preserved in the vinegar. They usually never make it back into the refrigerator at our house though lol. I would say try to eat them in a few days or put them in a sealed container though.
