I'm a chef and its a good recipe, to be sure, but please stop teaching others to waste kitchen twine when the scallions and lemongrass or other "sprigs" of herbs can simply be tied with one (or more) of their own strands, could they not? Many Filipinos are not rich to tie lemongrass and scallions with twine all the time when those can simply be tied with one or more of their own strands. The twine, however, should be used to "tie" the legs to keep those from "spreading" as they cook, thus keeping shut the cavity as well and this of course is a valid reason to use cooking twine. IF NO twine is available, simply "toothpick" the legs/cavity shut with toothpicks as needed and keep track of how many are put in so that an equal amount shall be pulled out before serving.
