  • Dessert, my favorite meal of the day. Today we are baking our TRADITIONAL NEW ORLEANS STYLE BREAD PUDDING. It is by far one of my favorite desserts. Made with stale bread and spiced custard, this dessert recipe is so delicious it does not need any sauce. In addition, it is an example of a no waste recipe.

    • Traditional BREAD PUDD...
    TRADITIONAL NEW ORLEANS STYLE BREAD PUDDING
    6 - 8 cups stale French bread, cut into chunks
    4 cups milk, at room temperature
    2 1/2 Tbsp vanilla extract
    1 1/2 Tbsp ground cinnamon, plus more for sprinkling
    1/4 tsp ground nutmeg
    1/2 cup unsalted butter, at room temperature
    2 cups sugar (or substitute), plus more for sprinkling
    4 eggs, at room temperature
    1 cup raisins (optional)
    1 cup shredded coconut (optional)
    1/2 - 1 cup roasted pecans, chopped (optional)
    1. In a large bowl, whisk together milk, vanilla extract, cinnamon and nutmeg. Set aside.
    2. With a stand mixer or by hand, cream butter and sugar (or substitute). If using a stand mixer, turn speed on low. Whisk in egg, one at a time. Slowly whisk in milk mixture until fully combined. The butter may start to harden and form chunks.
    3. Preheat oven to 350°F. Place bread in a large bowl. Pour wet mixture over bread. Stir until fully combined. If you want, you can use your hands. Set aside and allow mixture to soak for 15 minutes. Optional: Add raisins, coconut and pecans. Also optional: Mash bread mixture with a potato masher to reach the desired consistency that you like for your bread pudding. Combine and rest an additional 15 minutes. Total resting time for bread to soak up custard is 30 minutes. Stir bread mixture halfway through.
    4. Spray an 8 x 11-inch baking dish with baker's nonstick spray or coat it with room temperature unsalted butter. Pour the bread mixture into baking dish and even it out. Sprinkle with a little sugar (or substitute) and cinnamon. Bake in oven until golden, 50 - 60 minutes. Best served warm.
    If you have old stale bread, DO NOT THROW IT AWAY. Grab a few spices and turn on the oven because in a little over an hour you will have a flavorful dessert that is super easy to make.
