SAM in case you don't know and maybe interested, there is a set of high heat silicone one piece spatulas which are really nice and avoid potential mold issues by a company name Dioro. I bought and use them regularly because I discovered two piece ones like what you are using can harbor mold despite washing inside the cavity that the handle inserts into. Mold starts growing in them when the glue gives way over time and starts getting food grossness in the glue area. The one piece ones from Dioro, you don't have to worry about that.
It may have been nice , but eating any breakfast sandwich warm surely is better than that , the bacon was 10min cooked to everything else & cold fried onions - Oh no !! Thanks

Made this today for me and the wife. Turned out really damn good. Replaced the brioche with a sourdough sandwich roll, and made chipotle bacon instead of an aoli. Love making those soft, curdy, chive eggs.

Try putting the bacon in a COLD oven, then turning on the heat. The rise-time of the heat gives the moisture in the bacon time to evaporate.
