NO... Not Butter... "Butterschmalz" = Butter lard. So all the Particels wich would burn at higher Temperatures are removed, by "clearing" the butter, and the Taste stays the same ;)
You don't originally fry the Schnitzel in butter, you either use "Butterschmalz" = "butter lard" which is some kind of processed form of butter, or very originally you use pigs fat.
