    How about lining the muffin cups with rice paper? It might prevent it from sticking and you can eat the rice paper!

      I saw something similar on Broccoli Mum. She used rice paper for her eggless omelette so it would hold together.

    👍🏼 Thanks for the recipes. I’m going try making these in my instant pot. I purchased the silicone molds for it and use them for pancake “cups” with a bit of chia jam in center.

    I bought a silicone muffin tray from Amazon, it’s very flexible and bendy, my vegan muffin quiches pop straight out.

      I think those ones with the feet are too inflexible and not the right ones. I should get new ones for sure

      Yes I have a silicone muffin pan with smooth sides. Everything comes out perfectly.

    INSTANT POT METHOD
    Put 1 cup of water in the bottom of your Instant Pot followed by a trivet.
    Spritz a 7-space silicone mold with water.
    Divvy the egg mixture evenly into a 7-space silicone mold. Fill 3/4 full.
    Cover the mold with the lid and place on the trivet in the Instant Pot.
    Place the cover on the Instant Pot and select "Steam" and set to 8 Minutes.
    NPR (natural pressure release) for 10 minutes and then quick release (QR) the rest.
    Carefully remove the egg bites from the Instant Pot and let cool for a couple minutes. Invert the mold and serve immediately. These are truly light and fluffy.

    I make these and I use a silicone muffin pan, but it has smooth sides rather than the zigzag textured ones. I find they pop out really well, and don't stick. :)

      I think those cute silicone cups I used were just the wrong choice.

    For oil free baking (and easier clean up), I really like using parchment cupcake/muffin liners. Thanks for sharing!

    Just Egg makes their own version of eggless bites that are really tasty, but yours look a lot healthier, and probably cheaper. I can't wait to try making them!

      Yes, mine are oil free, which is a requirement for any of the McDougall programs.

    One more thought on the sticking issue... aside from me using cooking spray, my muffin pans are non-stick. I don't see a company name embossed on the metal but the pans that I have are glossy. Wilson Cake pan company makes non-stick bakeware including muffin pans. Love your lessons!

    I somehow missed your 'Just Egg Substitute' video, so I'm THRILLED to have caught this one! I've been looking for a savory grab & go breakfast recipe, and I can't wait to try this one. The chickpea flour egg cup recipes I've seen in the past just don't suit my taste (I can always taste the chickpea flour) so I have really high hopes for your recipe. I might experiment with adding some curry powder to some of the cups, because I just love that flavor. Cheers!

    Great recipe! I'm always looking for high protein plant based meals. Maybe a little non-calorie cooking spray on the muffin containers could help. It always works when I bake muffins. Thank you! I also subscribed to your sister's channel as well.

    I tried your JustEgg copycat recipe in the skillet this morning. The flavor is great but the texture was just clumpy mush. Any tips for next time I try?

      You want it to be somewhat liquidy. You may need to add more plant milk to it. Try it in a muffin pan like this. I personally think it works so much better in the pan baked than in the skillet.

    That’s odd about the sticking. What was the longest time you waited to let them cool before attempting to take them out? I find with silicone you really have to wait a long time.
