The design on these bolts is the most annoying thing I've encountered. Tried doing my from suspension but couldn't Because of that drop link. Pretty much broke it trying to unscrew it. Left it loose and now I need to buy 2 replacement ones and then do the suspension
I agree, it took me a while to get it off as well last time I tried doing them. I'd cut the bolt personally and fit new straight away. If not you might damage the roll bar, elongating the hole it mounts to

Did you check on the bushings of sway bar? Needed to replace those as well.
