made this recipe this weekend . was most impressed with browning flower dry on griddle usually i add oil in from the beginning but i did it bruce way this time and was very happy!! bruce been the man since swamp people season one

I make my roux on a flat top and make my stock too. Only thing I do differently is brown my sausage (and I use fresh and smoked sausage) in a pot then put the holy Trinity in after to soak up all that gradu at the bottom. Then add the stock, roux, chicken, sausage, aundouile, and whatever else. Gives the stock a great taste and makes that roux darker than the Mississippi Delta on a cloudy night.

I have had Sasafras (I don't know how to spell it) tea many times as a kid living in Indiana . I have never heard of grinding the leaves to use as a seasoning . Very interesting.

Conecuh is sold in Florida as well. Delicious. Made a cabbage soup with that the other day. Wish it didn’t have MSG in it though.

Not sure what seasoning you put in the pot when cooking but outside of that only thing I seen different is I put in some bay leaves while cooking .

You know I'm a Southern boy through and through!! Southern by birth and Southern by the grace of God!! Grown up in East Texas and western Louisiana there isn't much I don't like will eat and haven just about everything you can think of that's come put of the woods and swamp but quit frankly have never like Jambalaya and Gumbo just never have liked it!!!

Been there three times in the past drove 20 hours this year to go see it again and it is all overgrown and rundown can’t believe you did that brother

Anyone that don’t like the sliminess of okra. If you put the sliced up okra in a pan.
Just a tiny bit of water just on the bottom to help it along.
The water will evap out. An it’ll start releasing the slime.
Keep it on the heat an stirring it a while longer. The slime will be bubbling etc.
but eventually the moisture that was in the slime evaporates off.
A you basically cook the slime out of it.
So you can still have a use the okra. But you’ll get atleast 90% of the slime gone.
That’s how I do it since the wife don’t like it much.
Just a medium high heat. A touch of water. Eventually it’ll be a bunch of slime an okra an be bubbling. A you’ll slowly see less a less slime in the pan.
Usually I leave the okra for seafood gumbo.
But everyone do what they like.
