Repainting the popcorn ceiling you applied two coats, but did you apply a primer or is it even necessary. And did you clean the ceiling prior to painting?
If the ceiling has never been painted, you must prime with oil based primer. If not sure, run your hand lightly on the popcorn ceiling and if a lot of the texture comes off and powdery on your hand, you need to prime. I personally spray ceiling paint with an airless sprayer 515 tip, but don’t run oil primer through the sprayer so I would use the split foam roller for oil prime. If your ceiling looks to be previously painted, you can just go straight to ceiling paint. I recommend Glidden paints for ceiling, recently used Glidden Ultra 7700, also Ultra Hide, which is no acrylic added.

I've heard it also hides poor drywall work. Sometimes people scrape their textured ceilings and reveal a very uneven ceiling. Turns an easy DIY project into a big drywall job lol.

Stipple is stamped on with a brush-like instrument. Popcorn (aka acoustic) ceiling is sprayed on. Two different types of texture.

because the tape doesn't stick well against the popcorn. The dusty bits get stuck to it, and it's annoying because it falls off

Be careful of what you're suggesting with the mud knife. Many older popcorn ceilings contain asbestos
