- Baigli (beigli, bejgli) has Jewish-Hungarian origins and there is no original recipe by which they are made. Bagels are fragile rolls, with lots of creamy walnut or poppy seed filling, scalded with vanilla milk. Baigli is improperly called "Hungarian brioche"! Hungarians also have their brioches or fluffy sweet breads (kalacs), in addition to these shortcrust pastry rolls with a pinch of yeast.

We present you the old recipe from our families (from our great-grandparents from Transylvania), as it was recorded in Arad, Cluj or Sibiu. 500 g of flour make 4 Beigli rolls: 2 with walnut, 2 with poppy! These need to be thin to bake nicely in the center. If you follow our recipe you will make the tastiest and most tender beigli!
