the ONLY thing I could recommend as doing different, brown-up that Borrito/tortilla-hamburger/cream cheese, B4 the parm wrap, I would add jalapeno/habanero/ghost-some kind of chili too...otherwise Fkn Genius Man, pure excellence...I'm drooling so, take that for what you will--well done!
But I love my fried eggs, especially with crispy edges and salt/black pepper. After that, my choice is British-style scrambled eggs (not the scrambled omelet US stuff).

I think you can substitute European cottage cheese for a dry ricotta.
