Malcolm I have a Tailgater pellet stove. I have Mesquite pellets will that also work with the turkey also. Do you have any awesome recipe I can put on and in the turkey but I don't want to use any hot sauce. I want to make it like a traditional turkey any ideas. I know you cook it to temp not time but did anyone catch a rough time estimate on the smoker at 300 to get up to the 160 internal temp? Just planning my Thanksgiving morning and how much sleep I'm going to be losing lol
Im gonna use alder wood this year. Been using it for a few months since that's the wood I'm using on the house I'm trimming. Haven't found anything it wasn't good with.

With mesquite having the tendency to create bitterness, do you think it’s safe to use mesquite on the kettle? Any tips are appreciated! Keep making MS proud!
Small chunks, 1 at a time. Keep that smoke as blue as you can. Preheating the next chunk inside the kettle (where it won't burn) will help with that. 2 or 3 chunks should be enough.
