- This is a favorite vegetarian - vegan in fact - winter meal. It's a mash-up of two recipes: one from Milk Street and the other from Cal Peternell's cookbook Twelve Recipes.

the kale in your photo is pretty green, but mine is brown. do you do something for your kale before you toss them into the pot?

Hi Alexandra, this looks tasty. One question, in the UK we normally rinse lentils under running water, do you do the same or is it unnecessary. Thanks
Hi David, I have actually never rinsed lentils ... I always rinse rice, but never lentils. That doesn't mean anything, however. I would hate to stear you wrong. But, if you were up for it, you could give the no-rinsing a shot and see how the lentils turn out ... might save some time down the line :)
