hela6208 LOL you must be from the UK or Europe. I am from the U.S. but lived in the UK and now Spain, and all you can get is desiccated coconut. It is rubbish. The coconut in the States-whether sweetened or unsweetened-is flakey, chewy and wonderful. Desiccated coconut is pulverised into practically a powder; and unheard of in the States.
I made them but used 3 cups coconut and 1 cup condensed milk and put 2 whole almonds pushed into the top and used an 8X8 pan (I don't have the 5X7) it's as great recipe!)😁👍
I have been making a very similar recipe for years. And it is amazing ! You melt two sticks of butter with a can of sweetened condensed milk until smooth. Then you beat in two cups of powdered (icing) sugar and eight ounces of sweetened coconut and one cup of chopped pecans or almonds. Refrigerate for an hour then roll into balls and dip into melted chocolate. And drop into mini cupcake papers . Merry Christmas 🎄🎁

My hubby wanted something sweet to snack on and, of course, I had just gone shopping the other day, buying chips, dip, and NOTHING sweet. But when I came across this recipe for our MOST FAVORITE CANDY BAR, "MOUNDS", I looked at your ingredients and I HAVE EVERYTHING I NEED! Lol. So the coconut 'filling' is presently freezing in two ice cube trays (first sprayed with Pam and then lightly wiped out with a paper towel) in the freezer section of my refrigerator. (I did add a teaspoon of Vanilla Extract to the mixture) And once that's good and solid, I'll start slowly melting my Nestles dark chocolate 'chips' in a pan on low heat, using my NuWave electric 'burner'...very accurate in its temperatures, thankfully. (I don't have a Double Boiler and need all the help I can get! Lol.) Then the dipping...chocolate-shell-hardening...and eating will commence! LOL! (Already sampled the filling...YUM!!!!!)
There's a pastry chef I watch here on YT who never uses a double boiler to melt choc chips. He has a large heatproof bowl filled part way with very hot water and places a smaller heatproof bowl, filled with chips, inside. Lets it sit for a few minutes and stirs on occasion. Works well and no risk of burnt chocolate.

Now they have frozen shredded coconut. It cannot be defrosted in the microwave. It's delicious. Thank you this recipe as coconut and chocolate is the bomb!
