I'm confused. Why is it that I can basically play a Cminor pentatonic, but just add a bunch of half steps and couple whole steps and bam 'im in G minor? Guitar is confusing lol.

serious answer: because the pentatonic simplifies things by removing the notes that might otherwise clash. there is only one note difference between Cm and Gm: Ab vs. A, and neither minor pentatonic scale contains them as scale degrees 2 and 6 are omitted. so both pentatonic scales are compatible with the parent key. 🤘
