  • Mapo tofu is a popular Chinese dish from Sichuan province. It consists of tofu set in
    a spicy sauce, typically a thin, oily, and bright red suspension, based on douban
    (fermented broad bean and chili paste), and douchi (fermented black beans), along
    with minced meat, traditionally beef. Variations exist with other ingredients such
    as water chestnuts, onions, other vegetables, or wood ear fungus. One account
    indicates that the dish existed as early as 1254, in a suburb of Chengdu, the
    capital city of Sichuan province.
    麻婆豆腐在同治元年(1862年,由成都市北郊萬福橋一家名為「陳興盛飯舖」的小餐館老闆娘陳劉氏所创。
    因為陳劉氏臉上有麻点,人稱陳麻婆,她發明的这种燒豆腐就被稱為「陳麻婆豆腐」。後來因為這道菜大受歡迎,
    食客多不知其原始店名,而稱之為「陳麻婆豆腐店」。該店與包席菜館「正興園」、「鍾湯圓」等店家齊名。
    由於陳興盛飯鋪本是鄉間小舖,早期店內並未準備牛肉和菜油等食材,食客必須自行先到肉舖割肉、到油鋪打油,
    然後將食材交給飯鋪的師傅來料理。稍後店鋪生意興旺,才開始由伙計代客到街上打油買肉。清代《錦城竹枝詞百詠》
    中收錄有一首描述本菜的詩:「麻婆豆腐尚傳名,豆腐烘來味最精。萬福橋邊帘影動,合沽春酒醉先生。」
    在中国文化大革命时期,此菜由于破四旧而一度被改名“麻辣豆腐”,至今仍有人用此称呼。
    Vegan Mapo Tofu
    1) Dice King Oyster Mushrooms, Carrots, Coriander.
    2) Cut Tofu, add 1 tsp of salt, boil in water for 2 min,
    take out, filter water and set aside.
    3) Heat oil, add diced Ginger and Carrots, stir fry, add
    King Oyster Mushrooms, add 1 tsp each of Chili Bean
    Sauce, Soybean sauce, Vegetarian Oyster Sauce, add
    1 bowl of warm water, add sugar, Peppercorn oil,
    Aged Vinegar, 1 tsp each of Dark Soy Sauce and mix well.
    Add Tofu, add Pepper, Sesame oil, toasted Sesame
    Seeds and Coriander. Serve.
    素麻婆豆腐
    材料:豆腐2塊;杏鮑菇200克;紅蘿蔔50克;芫荽、薑末、烤芝麻各少許;辣豆瓣醬、黃豆醬、素蠔油、花椒油、
    麻油、老抽、陳醋、糖、胡椒粉各適量.
    做法:1)杏鮑菇切小粒;紅蘿蔔切小粒;芫荽切碎.
    2)豆腐切丁,加鹽1茶匙氽燙水2分鐘,用篩網撈出滤水待用.
    3)熱下油,下薑末、紅蘿蔔炒片刻,下杏鮑菇炒片刻,下辣豆瓣醬、黃豆醬、素蠔油各1茶匙炒片刻,下開水l碗
    不糖、花椒油、陳醋、老抽各1茶匙拌匀.下豆腐煮開,勾芡小心慢慢拌匀.下胡椒粉和麻油少許再拌匀上盤,
    灑上烤芝麻和芜荽.
