      I fold my scrubs and get my work bags ready for my home care clients ❤❤❤ it’s just my routine , then I go back later in the week and watch again to get recipes 😊

    My mom couldn’t get us to eat zucchini. So she started leaving the left over fried zucchini on the table after dinner. When we got hungry later we would walk by the table & grab one to snack on. We all turned into zucchini lovers. Smart momma.

    You can peel zucchini, slice the entire piece horizontally, scoop out the seeds, then slice into half moons. Then use your favorite apple pie spices/recipe to make a mock apple pie. It looks and tastes exactly like a real apple pie. You can make double crust pie or single crust and crumble topping. SO delicious!

    Hello Jessica I have been picking wild blackberries that grow in my backyard I have picked 8 quarts so far over the last 5 days and I still have so many to pick. The wild bunnies love the clover in the yard. Happy Birthday Benjamin. Hope you have a great week.

    I also cook outside in the summer. I never use my stove or oven indoors. I’m an empty nester now and live alone, but cooking outside is so much easier and no mess at all in the kitchen. So I totally agree with you on cooking outside. There’s just something about it. I make zucchini brownies with my extra zucchini . There are a lot of recipes online, and oh my goodness they are delicious. I bet your kiddos would love them. Thank you for sharing a bit of your life with us.

    Have you ever tried making zucchini flour by péeling the green skin off and then slicing and either dehydrating or freeze drying and then just pulverizing as needed in the food processor. It would give you another non-wheat flour option and be significantly cheaper than other alternative flours.
    The skins could either be fed to the animals Or season them with salt, garlic or onion powder and perhaps thyme or favorite seasoning let them dry out enough so they arent wet and then fry up like chips. Im thinking those mightbe a start to changing the kids minds about zucchini.

    Hi Jessica, I just wanted to say thank you for your videos! I love your calming voice! I grew up in China and we have something called zucchini pancakes. You shred up zucchini and add in eggs and flour, salt and pepper, then cook them like how you cook pancakes. They’re delicious and very nostalgic for me since it was my late grandma’s recipe

    Hi Jessica, for an AC. Maybe a mini split system they don't require any duct work to be installed and they have systems that can cover 5 rooms. All depending on the your needs at the moment and cost. Sending love to you and your family from Texas.

    We had a storm knock out power while I was cooking-transferred to cast iron and cooked outside-I love it! I do my canning on a camp stove so I’m used to using outside kitchen setup! I’ve seriously thought about getting a blackstone! Time for blueberry picking around here!

    I would like for you to share what you call your boring meals. Many of us are busy this time of year and need inspiration for simple meals. I enjoy eating lunch from vegetables and fruit I have just picked. My lunch might consist of raw kohlrabi and a glass of tea. I can't think of anything that I like more than corn on the cob with a little butter and salt and sliced fresh tomatoes. It will be a while, but when sweet potatoes are ready, I like to bake a sweet potato and eat it with a little butter and roasted pecans. I don't know a thing about doing videos on youtube, but I do know that you are my favorite show to watch, and I love your meal ideas. I am sure I would love your "boring" ideas, too!

    Zucchini Pie! Interesting! So I guess you could add different kinds of spices to make different mock pies because zucchini takes on other flavors…. Apple pie, pumpkin pie… what else? What a great idea. Thanks for the video, Jessica! ❤️

    A tip for harvesting mulberries is to put an old sheet under the tree and shake the branches. We used to do this as kids when mom asked us to collect them 😊

    Zucchini!!!! I made zucchini pie this week too, but mine is more like a breakfast casserole. Another idea for using zucchini is to make mock apple topping. Peel the zucchini, scrape out the seeds, and cut into small bite sized pieces. If you have a recipe for homemade fruit topping, follow the recipe, but swap out the water for apple juice and the white sugar for brown sugar. Add some cinnamon and cook until the syrup thickens, add the zucchini and cook until softened. It’s so good on pancakes or waffles, but doesn’t keep well in the fridge so it needs to be eaten right away.

    Another thing you can do with Elderflower heads is to make a fritter, you dip the heads into a batter and then deep fry them sprinkle with powdered sugar and enjoy ❤

    I live in England, in Hereford countryside. One of my families favourite foraging days out is to collect the elderflower heads to make a years worth of elderflower cordial.
    The smell in the house that week is so beautiful. The sweet floral drink has always been mine and my children's favourite.

    We dip the elderflowers in batter and bake them in the pan and put some powdered sugar on top! So good!

    Zucchini was always the only thing in my garden that critters didn't eat most of. I'm not really a fan, and neither were my kids ( except for sweet desert/bread ). I shredded lots of it and froze the shreds. Determined to make use in a savory dinner dish, I started using it shredded into my tuna pasta casserole instead of peas (or sometimes with peas too). The kids loved it. Pretty simple recipe. Although I also used cheese in my recipe, cheese substitute or no cheese works too. Really enjoy your channel! Happy birthday Benji!❤

    I also do some canning outside. When I do Tuna, I have 4 pressure canners going and at a friends house because of the large amount we can. Her garage works wonderful to leave them sit to cool off. Another great video, thank you.

    QUICHE - A CLASSY CHEESE PIE
    Serves: 4-6 Prep time: 10-20 minutes Cook time: 1 hour
    TO PREBAKE THE PASTRY SHELL, PLACE UNPRICKED PIE SHELL IN 450 DEGREE OVEN FOR 5 -6 MINUTES.
    I make a basic mix for a 9 inch pie pan of:
    3 eggs & 1 1/2 cup milk (I prefer half & half) mix
    then add add 1 1/2 cups of shredded cheese
    and 1 cup of cooked meat and/or vegetables.
    (Leftovers are terrific for inspiring new additions).
    Add an herb, if you like (I prefer fresh or dry thyme and fresh grated nutmeg).
    Mix all together and pour custard into a partially baked 9-inch pastry shell.
    Bake in a 325 degree oven for 50 minutes or till the center is nearly set, (Shake pie gently to check or use the knife in the center if cones out clean it is done).
    Notes: Let your imagination guide you when it comes to choosing goodies to round out the quiche. Used cooked or canned foods and cube, slice or dice to suit your taste (bacon, ham, sausage, pork, beef, chicken, tuna, broccoli, asparagus, cauliflower, corn, carrots, mushrooms, onion, zucchini, shrimp, crabmeat, or scallops).
    TO MAKE A MEXICAN FLAVORED CHEESE PIE:
    5 eggs
    1 cup cottage cheese
    1/4 cube butter
    1/2 pound jack cheese, grated
    1/2 tsp. baking powder
    1/8 cup flour
    4 oz. diced green chilies
    Add any other goodies like ham, mushrooms, green peppers, onions, or tomatoes.
    Bake at 350 degrees for 35-40 minutes

    My grandma made zucchini shredded with vanilla, sugar, & cinnamon, in a pancake batter, and fried it like pancakes. We called it chocolate pancakes, because it was brown on the outside. Kids will love it

    We put a tarp around the bottom of the tree. Then give the branches a shake. Then pick up corners and they go to the middle. Drop one side down over a container

    No matter what lighting you have, I think all your food looks delicious! Your kids are growing so fast. Love watching the littles be silly. I don't like zucchini as a side either, but my Mom used to coat it with corn meal and fry it like she would fried green tomatoes. That's the only way I would eat it.       I love fried zucchini and sometimes will make it into zucchini parm instead of eggplant parm its really good. I've never had fried green tomatoes but have always wanted to since watching the movie Fried Green Tomatoes

    I have started drying my zucchini to make flour. You can use it in place of coconut flour in recipes that would be paleo/gf. That zucchini pie looks very interesting! The doughnuts look DELICIOUS!
    I also have made zucchini relish, both sweet and dill and we really enjoy those. I made some zucchini mock pineapple but haven't used it much. I guess I don't really use pineapple much, but it tastes just right.
    Regarding your lighting, I believe it is actually the color of your counter that is washing out the color of your foods. I bet if you had a white cloth or maybe a dark cloth under for contrast, the color would show better...but also a hassle that isn't necessary. We know your food is good!

    It was raining yesterday. Picked snap peas, snow peas and strawberries in the rain. I knew some of the strawberries needed to be picked. I had enough strawberries to fill a freeze dryer tray. Today I'll blanch and freeze the snow peas. I gave my nephew and his family almost a gallon bag of snow peas. It was actually nice to harvest in the rain. Brought back childhood memories of playing in the rain. I love zucchini. I'll shred, dice and cook it fresh. Thank you for the wonderful video. I always enjoy them. Have a blessed day.

    Definitely going to try the zucchini pie! I'm also going to fry those tiny potatoes that I wondered what to do with - of course to eat them. My elderberry NEVER produces fruit! I get blossoms on many of the bushes and every once in a year, several berries. Not enough to even pull to eat. So, maybe elderberry jelly is the only product but at least I can use it. I love jelly/jam in yogurt for breakfast with bran flakes. YUM You have a really good looking and smiling and happy batch of children!

    My grandparents always kept a garden and I remember a few years the zucchini grew in abundance and they gave away so much and still had a ton lol. I think I'd love to try that zucchini pie. My grandparents put shredded zucchini into cookies, breads and my favorite was in the meatloaf, it was delicious in there and also my grandpa made his meatloaf with oats. Happy memories for me...

    I learn so much from you, Jessica! Never knew about making jelly from clover and elderflowers but I definitely want to try it! I've made mock apple pie with zucchini, but didn't like the texture of the zucchini chunks. I'll have to try your zucchini pie!

    Hi Jessica, my kiddo's like zucchini and yellow squash thin sliced sometimes we add onion. Add quite a bit of butter in a Skillet and add both squash (optional onion) and saute with lid on add Salt and pepper. They almost get Carmel color and are so super sweet.     I am going to try to make red clover jelly with some dried flowers.
    Also, Rosered Homestead had a recipe last year for zucchini soup and it WAS AMAZING & EASY. I recently dehydrated a bunch of zucchini & made the same soup but with all dried ingredients (zucchini, butter, cream, potato instead of flour,) Delicious & perfect for traveling!
    That zucchini pie looks so good!!!!

    I can’t wait to try the zucchini pie. I’ll definitely use the vitamix, which we did with our pumpkin purée, and the pumpkin spices. Always looking for a way to use the zucchini up.

    Zucchini pie wow have not tried that but it looked delicious so will give it a try. Garden here is starting to take off as well so always looking for new ideas. Thank you for sharing.

    I saw zucchini pineapple on Homesteading with the Zimmermans. Looks really good. Her children aren’t crazy about zucchini either but they love the zucchini pineapple.

    Hey, Jessica, you may want to try and add some cinnamon to that crumble topping. Cinnamon with any zucchini baked dish is delish and makes it taste like apples.

    Elderbery syrop is great on its own, you just add water, lemon juice, sugar and you have a great lemonade, my family lovers it

    That all looked really good. I use zucchini in a lot and have made Zucchini latke's (like a burger) but not pie - will have to give that a try. Donuts looked good. Garden looks nice!

    Spinach Egg Bake
    Ingredients: 2 Tbls. butter
    2 tsp. minced garlic
    1 med. onion chopped
    1/4 to 1/2 of a green bell pepper, chopped
    chopped celery and mushrooms if desired, 3 slices salami, 1 Tbls. Romono or Parmesan cheese
    6 eggs & 1 to 1 1/2 Tbls. milk
    1/2 cup grated swiss cheese
    Recipe instructions: Saute all in butter add sweet basil or tarragon. pinch of fresh grated nutmeg, add salt & pepper to taste. Add 3 slices dry salami. add chopped 2 pkgs of frozen spinach which has been thawed, drained and water squeezed out. Pour all into shallow casserole dish. then beat eggs with milk add all the cheeses. Add to casserole dish. Bake at 350 degrees oven till set or may be cooked as an omelet.

    Hi Jessica! Happy Birthday to Benjamin! He sparks such joy! What a gem he adds to your family!! Thanks for sharing that zucchini pie recipe! What a fun way to use zucchini! I still have some of my Pineapple zucchini, and some apple and peach pie filling I made from zucchini, I need to use in this pantry challenge. ;) I also just made some AMAZING Rhubarb Chipotle BBQ sauce (I am going to edit). So this mid pantry challenge has been SUPER helpful!! Your garden is looking AMAZING! Oh and what a great idea for the chards too, I have just been adding them to salads, but I am going to try that!     I love zucchini! We use it so many ways. If you think about it, it might just be the only veggie that can be used for any meal of the day and any part of the meal, fom soups to dessert! And I make zucchini relish that everyone seems to like. The only zucchini pie I've ever made was a savory pie with onions and cheese in kind of a savory cobbler crust.
