    Hello Friends,
    Welcome to Foods Of India.
    Today we are going to prepare Chettinad Mochai Sinthamani (மொச்சை சிந்தாமணி - மொச்சை மசாலா சுண்டல் ) which serves as an excellent evening snacks also side dish for idli, dosa, and all types of variery rice and mainly for Rasam & curd rice
    This is a great evening snack which is particularly sold around chettinad region's tea stalls.
    Ingredients
    Mochai (மொச்சை) - 1 cup
    (dry roast 2 minutes and soak it for at least 3 hrs)
    Cook the mochai for about 7 whistles
    For masala sundal
    Ground nut Oil - 3 Tbspn
    Bay leaf - 1
    Cinnamon - 2
    Fennel seeds-1/2 tspn
    Finely chopped
    Shallots - 200g (1 cup)
    Garlic - 15 nos
    Ginger - 2 small pieces
    Green chilly - 3
    Red chilli powder - 1 1/2 tspn
    Coriander powder - 1/2 tspn
    Garam masala - 1/2
    Turmeric powder - 1/2 tspn
    Salt - As required
    Basin flour - 2 tspn
    Curry leaves
    Tomato - 1
    Water 2 cups

    Why we are not using the cooked water of mochai? Usually I use the cooked water along with the gravy. Please reply

      Soaked water gives some bitter taste

      @@foodsofindia20 don't we lose the nutritional value of mochai in that cooked water?
      While soaking mochai whole night, we drain that water . Still we have to drain the cooked water?

      Definitely 👌👌. I prefer Mochai Maal with lemon rice, rasam rice & curd rice

      கார்ன்ஃப்ளார் சேர்க்க கூடாது. அதற்கு பதிலாக பொட்டுக்கடலையை மிக்ஸியில் தூளாக்கி போடலாம்.
