Forms, or Kata are essentially an encyclopedia of techniques and combinations compiled over generations by masters. They are used in most Traditional martial arts (Chinese, Japanese, Korean etc) to some degree as a way to pass on a system or style. Each movement executed typically has many different applications, from a block, to a strike, to a throw, joint lock... they are only part of martial arts, they do not substitute actual sparring but are trained together with sparring and conditioning. They also help teach proper technique (posture, generating power..) kata, or forms, are similar to shadow boxing in that when practicing them you are imagining various ways of responding to an opponent.

When someone outside the martial arts sees a Kata, they think: "what nonsense, you can't fight like that on the street." The "Kata", if you want to take it to reality, you should not try to do a complete Kata on the street (basically, because it is impossible).
