  • 초코 주르륵~ 미니 딸기 케이크 만들기 : White Chocolate Mini Strawberry Cake Recipe
    케이크 시트를 작게 구워 귀엽고 깜찍한 딸기 케이크를 만들었어요~
    저는 제누와즈를 구울 때는 폭신하고 안정적인 공립법을 좋아해요.
    작은 케이크지만 딸기와 함께 크림도 채우고 위에도 딸기를 올렸어요.
    코팅용 화이트 초콜릿과 생크림만으로 글레이즈를 만들었는데
    안정적으로 잘 흘러내리고 기포도 거의 생기지 않아 좋았어요.
    글레이즈가 바닥까지 흘러내려서 하나씩 따로 접시에 담아 만들었어요.
    딸기가루와 슈가파우더를 섞어 솔솔 뿌리니 케이크가 더 예뻐지네요~
    딸기 케이크는 맛이 없을 수가 없는 조합이라 말이 필요 없는 맛이에요^^

    - 약 8개 분량 about 8ea
    [재료 Ingredients]
    | 케이크
    3개 달걀
    90g 설탕
    3g 바닐라익스트랙
    25g 무염버터
    25g 우유
    85g 박력분
    | 크림
    150g 생크림
    45g 크림치즈
    20g 설탕
    딸기
    | 글레이즈
    80g 코팅용 화이트 초콜릿
    60g 생크림
    흰색 식용색소
    딸기가루 + 슈가파우더
    | Cake
    3 Eggs
    90g Sugar
    3g Vanilla extract
    25g Unsalted butter
    25g Milk
    85g Cake flour
    | Cream
    150g Whipping cream
    45g Cream cheese
    20g Sugar
    Strawberry
    | Glaze
    80g White chocolate for coating
    60g Whipping cream
    White food coloring
    Strawberry powder + Powdered sugar
    [만드는 과정]
    케이크 시트
    1. 끓인 물이 담긴 냄비 위에 달걀이 들어 있는 볼을 올리고 설탕과 바닐라 익스트랙을 넣어 주세요.
    2. 계속 천천히 저으면서 달걀물의 온도를 40도 정도까지 올리고 볼을 내려 주세요.
    3. 버터와 우유가 들어 있는 볼을 냄비에 올리고 중탕으로 온도를 올려 주세요.
    4. 미세하고 고운 거품 상태가 될 때까지 약 5~6분 정도 중고속에서 휘핑해 주세요.
    5. 가장 낮은 속도에서 1~2분 정도 기공을 정리해 주세요.
    6. 밀가루를 체 쳐 넣고 섞은 뒤 버터와 우유가 들어 있는 볼에 약간의 반죽을 넣고 섞어 주세요.
    7. 본 반죽에 넣고 골고루 섞은 다음 짤 주머니에 넣고 틀에 80% 정도 채워 주세요.
    8. 160도 오븐에서 25분 정도 굽고 틀에서 분리한 후 식혀 주세요.
    9. 크림을 채우기 위해 케이크의 중앙 부분을 제거해 주세요.
    크림치즈 생크림
    10. 생크림에 크림치즈와 설탕을 넣고 휘핑해 주세요.
    11. 크림의 2/3를 덜어 짤 주머니에 담아 주세요.
    12. 남은 크림에 작게 자른 딸기를 넣고 섞어 짤 주머니에 담아 주세요.
    13. 케이크의 중앙 부분 홈에 딸기를 넣은 크림을 짜서 채워 주세요.
    14. 윗면에 크림을 짜고 매끈하게 정리하고 글레이즈를 만드는 동안 냉동실에 넣어 두세요.
    글레이즈
    15. 코팅용 화이트 초콜릿에 생크림을 넣고 전자레인지에서 30~40초 정도 가열해 완전히 녹여 주세요.
    16. 화이트 식용 색소를 넣고 섞고 온도가 30도 정도가 될 때까지 식혀 짤 주머니에 담아 주세요.
    17. 냉동실에서 꺼낸 케이크에 글레이즈를 붓고 윗면에 딸기 가루와 딸기를 올려 주세요.

    그러고보니 더보기 레시피설명에 5번 달걀 머랭 후 밀가루 섞는건 안 나와있네요.
    전 25분 구우니까 윗면이 푹 꺼지고 쪼그라들어서 12-14분만구웠어요. 그래도 약간 쪼그라들더라만
    영상에서도 8개 분량이 아니라 6개인거같고
