Best Japanese Souffle Cheesecake :: Soft, Fluffy and Jiggly :: Cotton Cheesecake

    If you follow this video, you can make a successful cheesecake without failure.
    It's really easy if you just follow a few precautions.
    It's a light cake that's not heavy, so I want to eat it over and over again.
    *** Weighing is scale (g), rice spoon (Tbsp), and teaspoon (tsp).
    [Cake mold: inner diameter 15cm, height 7cm]
    ✤ Paste
    - 150g Cream cheese
    - 25g Unsalted butter
    - 50ml Milk
    - 4 Room temperature egg yolks
    - 40g Cake flour
    ✤ Meringue
    - 4 Room temperature egg whites
    - 60g(6Tbsp) Sugar
    - 8g(1Tbsp) Lemon juice
    ✤ Decor (optional)
    - Strawberry
    - Sugar Powder
    ✤ TIP
    - Egg weight including shell, total 258g (using large eggs), small eggs are okay.
    - Eggs need to be cooled at room temperature for at least 30 minutes to make meringues stable.
    - Lemon juice is an essential ingredient for stabilizing the meringue and removing the smell of eggs.
    - After baking at 110 degrees for 60 minutes, I baked it for 3 minutes at 150 degrees to add more color.
    I think the color on the top is darker than I thought. If you make it just as in the video, the colors will come out prettier.
    - It is delicious to eat right after baking, but it tastes even better the next day after refrigeration.

    저는 집의 오븐이 윗면만 쉽게 타는지라 더 낮은 온도에서 약 1시간15분정도 해주었어요.1시간째에 거의 익긴했었는데 윗면 색이 나왔음 해서 좀더 있어보았어요. 담번에 또 해봐서 그땐 더 완성도 있게 하고싶네요오😊😊 감사합니다!

    Baked this yesterday and i DEFINETELY recommend baking it! It was fun to bake and tasted amazing! Only the top cracked by me but it didnt effect the taste at all😋 (it’s kinda wet from the inside btw)

    Thank you for the awesome recipe , it turned out great if all instructions are followed carefully.
    I have a question regarding the ingredients. For your recipe we use 150g of cream cheese. In my area all cream cheese comes in packages of 225 grams. Which is 1.5 more than the original recipe.
    My two questions are. If I am to scale the recipe to accommodate the amount of 225g. Do all the ingredients scale in a linear manner?
    2. Does the cooking time change based on the increase in ingredients?

    I made it yesterday. It was pretty good. After 60 minutes at 230°F, I added another 5 minutes at 302°F and another 5 minutes at 320°F, But the surface of the cake was still not as dark as your video. But the taste was really yummy. fluffy moist and rich. Appreciate for your sharing❤

    NGL this recipe looks super super similar to Nino's Home recipe which I've been using for the last year, even down to the temperatures, times and opening the doors inbetween lower the temperature from 160C. I only recognise it because I make this almost every month.
