I made it yesterday. It was pretty good. After 60 minutes at 230°F, I added another 5 minutes at 302°F and another 5 minutes at 320°F, But the surface of the cake was still not as dark as your video. But the taste was really yummy. fluffy moist and rich. Appreciate for your sharing❤

Thank you for the awesome recipe , it turned out great if all instructions are followed carefully. I have a question regarding the ingredients. For your recipe we use 150g of cream cheese. In my area all cream cheese comes in packages of 225 grams. Which is 1.5 more than the original recipe. My two questions are. If I am to scale the recipe to accommodate the amount of 225g. Do all the ingredients scale in a linear manner? 2. Does the cooking time change based on the increase in ingredients? Thank you.

I made this today! I have some hints for future me when I do this recipe again: You need a larger bowl for after you strain the paste, 4 bowls, a small bowl for egg yolks, medium for double boiling, medium-large for meringue, large to strain paste into and incorporate meringue Add sugar to meringue in 3 parts, letting it fully incorporate each time Add the meringue in 1/3s, whisk in 1&2 and fold in 3rd. Don't over stir but make sure u reach the bottom of the bowl. Make sure you don't forget to put it in a water bath, cover the container in foil and put it in a tray of water Bake at 320 F for 20 mins, then open the door for 1 min, then set the oven at 230 for 60 mins, then 300 for 3 mins, then let it sit open and off with a SILICON OVEN GLOVE for 30 mins. You crack open the oven, to look you crack the cake
Would anything change if I added a bit of flavoring to the souffle? For instance what I need more flour to absorb if I added some mango juice or fruit or even a passion fruit concentrate?
Acabo de hacerlo siguiendo la receta al pie de la letra, quedo igual y suena igual al partirlo pero no me encantó el sabor, en lo personal está muy muy simple y nada espectacular. Seguiré buscando la receta del mejor cheesecake japonés
