Have you tried connecting a Magic Trackpad directly to the AVP. Even thought it doesn’t support mouse connectivity it does support the magic trackpad. I haven’t found a video yet that shows this working.
You can share your Apple Magic Keyboard between a Macbook Pro and Vision Pro at the same time. Just make sure that in macOS Settings / Displays / Advanced you enable “Push through edge”
You mentioned bluetooth mice a couple of times, but you can't actually pair a bluetooth mouse with the Apple Vision Pro. It only pairs with keyboards and trackpads.
You can't hot-swap batteries - the device shuts down if you detach the battery. Plugging a USB power bank into the battery pack would be a better (and cheaper!) option, or just plugging the battery in to charge while you're sitting down and working.
I am honestly impressed with the actual real-world applications that this video has given on a topic that is saturated in this space.

No. He said you can use it while charging. doing so charges the battery very slowly, but that doesn't affect desk use

Can’t work with mice yet. Bought a trackpad for excel, but honestly eye tracking and good keyboard technique works better.
