  • Chef Antonio Carluccio finds out what an Italian Renaissance kitchen would have been like to cook in at the Villa Aldobrandini, just outside of Rome. Here he prepares Scappi's Porchetta - stuffed pig - a dish that looks fit for kings. From the BBC cookery show Carluccio and the Renaissance Cookbook. I love how he refers to the pig as his friend and apologises when he needs to put the spit through. What a gentleman with true passion and compassion.

I would have loved to apprentice in my cooking days with a chef as good and wise as Don Antonio. Rest in peace, Maestro...

What a pleasant, remarkable, Italian. Much love from Australia. He taught me heaps. I copied by hand ALL his recipes from the VHS's I made of his BBC series.

What a rich filling! So many flavors cooked for hours and permeating the meat! In a wood fired stone... A modern human has never tasted such a treat.

I once found this very old Ottoman cookbook with recipes. It's nice to see that there are so many similarities. That the Greeks, Romans, Byzantines, Turks, Ottomans everyone in that are haven't completely lost their heritage in kitchen
