What are alarm severity values 1, 5-10 telling you (if they exist) or could be used for (custom user alarms)?
there is much more than 0-10 😉, they can be used to control robot behavior when faulting out. You can find description for most of them in FANUC user manuals

You have probably a lot of ideas for videos, but could You do someday something about Homing procedures?
Generaly speaking, what to do if robot cycle has been interrupted. It would be really great.

How about the hold signal from SOP/UOP is lost
That's usually a PLC issue
