    Just FYI, dry pasta (re hydrated when cooked) is considered optimal when cooking most authentic Italian pasta dishes like Carbonara or cacio e pepe, since you're unable to get that al dente chew with fresh made pasta. However there are still levels of quality when it comes to dry pasta. I cook a range of recipes from different cultures, including authentic Chinese cuisine, so I'm thinking you might assume that dry pasta in Chinese cuisine is considered cheaping out, which you'd be correct. But in authentic Italian cuisine, high quality dry pasta is the go-to for lots of (though not all) pasta dishes.

    Genuine Italian food made exceptionally well isn't hidden underneath a mountain of sauce, the pasta and fresh ingredients are the star and L'Artusi honoured that dish to perfection, it looked delicious, as did the dessert - very clever pairing of the olive cake with the creme fraiche and marmalade.
    I can't be the only person to watch UA's videos to see him eat, his reaction to eating great food is priceless lol

      Nice restaurant! But you ordered just carbs! I would have liked to have seen a second course! The portions were small/medium so I would have ordered salad or a meat/fish course, as well!

    Love your reviews, UA👍 Your facial expressions kill me: When you love something you always make a face like you ate something bitter and shake your head. With the sound off, I’d think you hated it. The chef is probably sweating thinking you didn’t like the food but you really loved it. Haha, it’s the best. Keep it up

    You have to love the simple perfection of a properly made pasta dish. This reminds me of Spaghetti alla Nerano, or Cacio e Pepe. Very few excellent ingredients, expedited perfectly. The dessert looked yummy, too. But I'll stick to my espresso and Sambuca 😉

    UA, u r the man. Love the way you "chomped" the food with eyes closed in perfect solitary enjoyment. The close up photography of the food is perfect. Suggestion: add some comments on the price of food consumed.

    Those prices are crazy, I’m a born and raised Brooklyn local but the more I travel, especially in Europe, the more I see how these prices have nothing to do with food quality/taste and everything to do with paying their exorbitant NYC rents! Lol

      You can't expect them to charge you 12 dollars for a simple dish when their rents are very expensive. You need to think a lil about how much it costs to run a company in that particular area......You can charge 7 dollars in Arkansas for the similar dish, but the rent and cost to do their business is totally different....

      @1flash3571 I already said this was the reason prices are more expensive in NYC, what I also said was I don’t think NYC rents is a good enough reason to pay such high prices. That’s my personal choice….there are places in The Bronx and in Queens that have great Italian food for way better prices

      $20-25 for pasta is normal at a half decent restaurant anywhere in the world, add meat and expect extra. I’m VERY well traveled and it seems to be the norm price from Europe to Australia to the Middle East and the US . In Rome, also $20 …
      I’m guessing your comparing to Brooklyn back in the day ?🤷🏻‍♂️ which I wouldn’t have a clue about but as far as now , it’s normal pricing.
      Hell , to even confirm I went on Olive Gardens website and there is not 1 pasta dish under $20 and we are talking the worst “Italian food” in the world that’s not even Italian

    Great review ! And yes the olive cake is meant to be eaten with all of the components on the plate not one at a time then you critique . The focaccia bread looked amazing and the spaghetti dish so so. Now let's find an Italian restaurant what I call a traditional Parm restaurant . Meaning they have chicken and veal parmesan antipasto fried calamari and mussels chicken and veal scallopini marsala franchise Style and of course ricotta cheesecake the best now we're talkin . Oh and just plain old traditional Italian bread and butter.

    Every video you make, I'm gonna make recommendations because you're the best. You GOTTA try Misi for pasta, Lure Fishbar for The Bash Burger, 4 Charles for their burger (imagine Au Cheval but with wagyu, which I'm usually against but they make it work) and their prime rib, Kings County Imperial and for good Chinese, Yakiniku No Futago for some amazing Yakiniku steak experience with the right theatrics, Cozy Royale for their amazing burger, and Hometown BBQ for some perfect BBQ.

    I’ve never been to Carbone’s location at NYC , but the one at LV inside Aria Casino is by far the best italian restaurant i’ve ever been to, and my top 3 all around.

    I went to NYC a couple of months ago and ate at Carbone. I can see how some would say it's overrated, but I enjoyed everything I tried. The grandma bread in the bread basket they bring out in the beginning is so good. Spicy rigatoni, Lobster Ravioli, and Chicken Massimo were fantastic.
    I think you would really enjoy it

    So glad this restaurant stands out from the typical trown together over the top places .
    They shown there flare when they can balance the right amouts of flavor ,textues.
    Focaccia was so big .i could not have all 3 i could do a main lol
    I guess the cake is like a scone idea .

    Carbone is overhyped, but it’s still damn good. If you can’t get into NY, the Vegas restaurant is also quite good.

    That's funny, 'cause none of the dishes on that menu exist here in Italy. That's why I never eat italian when I am in the States except at home. But I think every kind of cuisine is adapted to the taste of the locals everywhere in the world. I'm pretty sure that none of the dishes we find in a chinese restaurant here in Italy exist in China. Anyway, keep on doing your great job, UA.

    My experience at L’artusi was dinner at the bar and it was great. The whole ambiance was very “New York”.
    Had squid ink pasta that was the most memorable for me.

    I admire how quickly UA altered his opinion of the dessert as he ate it. He is someone who knows how to learn and is quick about it. He claims to not know how to eat pasta correctly yet I see he grabs the right amount and twirls it against the side of the dish so it won't pick up friends and become huge clump. The bucatini dish in the menu, I have to credit l'Artoozi for not calling it Bucatini all'Amatriciana because while perfectly delicious, pancetta should be replaced by guanciale to call it that(did it mention Pecorino Romano?). Also, as others have noted, dried pasta is often preferred in recipes that were after all first made with it, with its al dente qualities, and also its starchy boiling liquid which is needed to create the emulsions in that ramp pasta that was featured, every strand coated evenly. If you have ever cooked with an artisanal Italian dried pasta, you will never again be tempted by Ronzoni or others.

    I was brought up on homemade pasta so I have a lifelong bias. Even though some Italian dishes traditionally use dry pasta, I wouldn't go out of my way to eat it while dining out.

    I question the Google reviews, seems like every restaurant is a minimum of 4 stars. I think Yelp has more critical reviews. If you see 4 stars or higher on Yelp its usually a winner.

    This looks more authentic italian. LIke you observed, the sauce they use with pasta is usually subtle visually whereas more americanized italian like carbone is very heavy and shiny looking

    To me service and atmosphere matter a lot. If I am alone, its like whatever, but if you have a date, the service and atmosphere of the place is what makes it worth it. I can grill a good steak at home. So when I go to a premium place with a date, I want good serrive, atmosphere, and fun to make it worht the 3X cost of what the steak would be if I made it myself.

    UA, Ramps are a wild member of the leek/ onion family. They are all wild foraged and an amazing seasonal delicacy!

    I think those were sultanas, not raisins. But the Olive Cake looks great!
