If my bass is going to my pedal, to the amp as normal, can I plug the headphones output into an interface to record? Will that work?

it will . but the speaker of amp is gonna be silent this way

There’d have to be zero latency as you’ll be recording a live instrument? I just can’t mic up the amp as there’s other sounds in the room playing.

Don't forget the headphone jack is backed with cabinet simulation so it sounds the same out of amp or headphones.
