I personally prefer dry sounds instead of wet sounds, so the cooking & stirring was not my favorite part, but I know others really like those.
Chefs always talk about needing to roast nuts before using them in a dish - does the process of incorporating them into the brittle while it's still cooking, essentially roast the cashews? Or they become the equivalent of roasted by the time the brittle is done? Really interesting process!
