    Fluffy, creamy and so delicious! My lemon buttercream recipe is made with lemon zest, lemon extract and citric acid to add a nice sour twist to this sweet frosting!
    This recipe makes enough frosting for a three layer, 8-inch cake; two-layer, 9-inch cake; or 24 cupcakes. This frosting will also work well for filling macarons or pastries. Buttercream can stand in the refrigerator for 1 week; cover well.

    I just discovered your channel and I absolutely love it! I’m planning on making a blueberry lemon Bundt cake so I Believe this frosting would be great. I see a few people are asking for a substitute for the citric acid, do you think it is because the citric acid will make the buttercream really sour? You said it’s what makes sour candy sour LOL , so I was wondering, Will the citric acid give the buttercream that same sourness that’s in warheads for instance?…thanks for the great videos keep them coming

      Hi! I'm so glad you found my channel! :) The blueberry bundt cake is so delicious! The citric acid doesn't make the frosting too sour, just gives it a little zing and helps balance out the sweetness. I think some people are not able to find it so they're looking for ways to replace it.

      Hi! This frosting keeps very well in the refrigerator. Just keep it well covered or even an in an airtight container. Allow the frosting to thaw at room temperature. This can take a few hours. Then remix for about a minute to get it light and fluffy again. Enjoy! :)

      Hi! I'm not sure what you mean by crusting... It does harden in the refrigerator though and you can absolutely use it under fondant :)

      Hi! Those are always so fun! I recommend adding more lemon zest. Adding lemon juice can be a bit tricky since it can cause the buttercream to separate. Add it last and mix for just a few seconds :)

      Hi! :) Congratulations on starting your channel! So exciting! :) I'm currently using Adobe Premiere Pro for editing my videos. I also use Photoshop and Lightroom for editing photos. I use a Canon Mark 5D Mark II - I've had it for many years and I love it! :) There are less expensive Canon cameras that are great for video, too.

    Looks delicious! This may be a silly question, but why not use lemon juice instead of lemon extract?

      Thank you! :) That's a great question! I don't think it adds enough flavor. You would need to add quite a bit of lemon juice and it would affect the consistency of the frosting

    So the buttercream not get lots if air bubbles from using a whisk and on a high setting?

      I always use a whisk because I find it gets the butter much lighter and fluffier. If you get too many air bubbles, use a spatula to press and fold the buttercream a few times. Enjoy! :)

      There's no direct substitute but you can try adding a few tablespoons of lemon zest. You can also try adding a few tablespoons of lemon juice but add it at the very end and mix it in briefly. It can cause the buttercream to separate.

      I'm not aware of another ingredient that can add the same tart flavor, however you can add some lemon zest to add more flavor :)

      I'm sorry, I don't have any substitute recommendations. You can add more lemon extract but the lemon zest really adds lots of flavor.

    You are using a wire whisk for mixing the butter....is this correct? I was unaware that the wire whisk was for beating butter?

      Yes, I always prefer to use a whisk attachment. It gets the butter more light and fluffy than a paddle. Just make sure your butter is softened before using it.

      Hi! I'm so glad to hear it! I recommend using a fresh bag of confectioner's sugar each time. If it stands for too long, it absorbs moisture. Also, try sifting the sugar first before adding. And maybe try a different brand?

      It depends on how much frosting you like to use for you cakes. If you like minimal frosting, 1/2 the recipe will work. If you like more frosting, prepare 3/4 recipe. Enjoy!! :)

      I personally don't like adding lemon juice because the extra liquid will affect the texture of the buttercream. Better to add some lemon zest instead of lemon juice :)

      I buy mine from amazon :) The lemon juice can cause the butter to separate. You can add more lemon zest. You can try adding a few tablespoons of lemon juice but at the very end and mix only for a few seconds. Enjoy! :)

      Yes! :) This will store great in the refrigerator. Just keep it in a well covered container, should be fine for a few weeks.

      No, vinegar will not work well for this recipe, unfortunately. You can add some lemon zest to the buttercream. It won't be the same but it will add extra lemon flavor :)

      No, never had an issue with it. Maybe if you add it too early in the recipe? I always add all flavorings at the very end

      There's no straight substitute but you can try adding lemon juice but at the very, very end and don't mix it too much. Lemon juice can cause the buttercream to separate.

      For about 1 month. Make sure to store it in a very well sealed container and thaw it in the refrigerator overnight, then at room temp for 1 hour

    I'm just confused why we added lemon extract and citric avoid as opposed to lemon juice... Considering you had the lemon to juice since you zested a lemon. 🤔

      The lemon juice can curdle the buttercream and cause it to separate. Adding the citric acid will add much more acidity that lemon juice can add.

      Hmm, are you adding anything else to the buttercream? Is your butter too soft or melted? If the butter is too soft, the frosting will not become as fluffy as it should. Try placing the butter or buttercream if you already started, into the refrigerator for 20 minutes to chill. And if you are adding any flavors or preserves, make sure to add them at the very end and mix only for a few seconds until combined.
