Because all the popular dishes (e.g. bulalo, sisig, lechon, tinolang manok/isda, adobo, etc.) that most Luzon and Metro Manila people brag about don't actually compare to what Cebuano people do in their style of preparation and the use of ingredients. Sinulog is all about 'a dance of either being grateful to God (represented by Holy Infant Jesus) or asking favor from God. It's definitely not comparable to Songkran in Thailand. If there is ever a festival in the Philippines that is comparable to Songkran, it is the Easter Festival as Catholics celebrate the risen Jesus Christ and most faithfuls consider it as a 'new life's beginning' after the Christ's ressurrection from the dead.

*house of lechon* is actually my number 1 2nd would be lechon from carcar (2 hours away from the city) rico's lechon is 3rd i'm fond of crispy, crunchy lechon skin the crispier, the cruncher, the better hats off to the *house of lechon* they're the winner in that crispy lechon skin department

The kinilaw tangigue with coconut milk & kinilaw seaweeds with a slices of unripe mango, so mouth watering food!!! you should probably know by now that cebuanos' lechon dipping game is different. i still prefer the luzon way of dipping personally. either way, both are good. just depends on your preferences.

FYI. In Cebu as we have the best tasting Lechon, we don't have the Mang Tomas sauce like in Luzon or Manila. We only dip it in Vinegar with chili or with soy sauce
Mergim, the trick in mixing halohalo is to just get the spoon down to the bottom and then keep it moving down there, in a stirring motion until the ice loosens up, melting away and you have all the ingredients swirling around, enough to be able to now raise the spoon and mix thoroughly with an up and down motion.

We also have a water festival like that here in the Philippines, it is not as big as the Songkran Festival though. It is practiced at San Juan City to honor St. John the Baptist.
You should also try visiting Vigan then go to Pagudpud beach and then Pagudpud Kabigan Falls. There are lots of wonderful scenery along the way going to Pagudpud!
yay back in cebu, you have to go back to south cebu and do a waterfalls paradise day ,so many gorgeous places aside from kawasan . also do tuburan ,cebu in north , lots of hidden gems

I guess it's about time for Sir Mergim to visit the underrated island of Mindanao. Just be educated on where not to go, the 10% of Mindanao. 90% of it is relatively safe. The place is completely different and resembles more to Indonesia or Malaysia.

Skin lechon-- the best part of the lechon-- specially, the cebu lechon-- because the cebu lechon version is known not to need extra sauce anymore because the salty flavoring is already right there on the skin-- and you left that out 😁-- but anyway, i know it's for healthy reasons, but to address that health concern-- this is why vinegar is needed, lots of it, as extra sauce while eating-- to acid-burn the fat before it circulates in your system-- cebu vinegar sinamak would be a good pairing for it--
The City of San Juan, Metro Manila has a similar festival.. BTW, for Lechon leftovers, be sure to have someone at home cook Paksiw na Lechon😋 to transform the leftovers into somewhat of a sweet-sour stew..
