at first when I saw Mongolian cooking videos, I thought that the food was kind of bland-looking coming from someone who uses tons of spices/seasonings (Vancouver Canada gal here). The use of green onion/simple sprinklings of salt as a major player in the vids seemed weird to me. Then, when I learned more about Mongolian cuisine, and that the meat there is just different, my thinking changed. They don't throw on flavour bc the meat of a sheep changes season to season. The nuances are all in the meat/preparation. They let all animal protein speak for itself, and it is all grown so organically. It's like how we eat sashimi so plain so as to enjoy the pure experience of the fish. Learning tons from Nargie! He's chill af. Learning.
Meat from gobi regions are the best, i cant express verbally but it's just way different. Plants that animals eat there is different, probably some herbal and shit.

My wife is Buryat. She introduced me to Traditional Buryat Food ( Like Booza!!!!). I spent winter a year ago in Ulan Bataar, where I had absolutely the best meat dishes I have ever had. Yes, I had Mutton which is much despised here in the US, but is more common than chicken in Mongolia. It was wonderful. I didn't believe that sheep could taste that good, no sheep taste. I had Horse, which I like, but the Mongols do it way better than we do. Or did, as horse is illegal here now. The chicken was good, but I think we do it better, the beef was good, we do it on a par here, and pork was good but again I think we do it a little better here. But the mutton was out of this world. By the way the dumpling were made an awful lot like booza. Rolled flat and pinched shut in a pattern that looks very much like the dumplings shown here, but smaller. Same lack of vegetables.
Western taste of sheep is like ,sitting on your shit and piss for years, mongolian sheeps go outside when they are outside herders clean the sheep farm.
