    Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
    When trying to decide what to freeze dry you can start by asking why.
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

    Hey, I just ate a bag of freeze dried lemon heads I got at a local place. They made them with the little lemon heads you get in a box. When they freeze dry they burst like a popcorn kernel and look somewhat similar to popped popcorn. The shell doesn’t change but the internal candy puffs to a very quick dissolving sweet candy. Try the smaller ones and see what you think. Personally I will never eat a regular lemon head again!

      I tried the the big ones on candy mode at 140. They just got hard as hell. Not like the ones I got from a freeze dried retailer

      @@tom_greenery Of course on my older machine it doesn't have a candy mode, so it's all manual. (are the ones in this video the "big ones"?)
      You could try going to 150º with the newer machine's candy mode - You could also try pre-warming the trays of candy before putting then in the precooled freeze dryer and then make it vacuum and heat right away. (I hope that makes sense)

    Did the candy lose weight? And how much?

      This type of candy tends to lose about 5%, which would be about 50 grams for this batch.
      I didn't weigh this batch before drying (I don't know why I didn't and please don't tell anyone:), I only did the _Dry Check_ weighing to make sure it was dry, and by then, of course, it had already lost the weight.

    I'll have to try the higher temp...tried at 130, Almost no change. 2022/23 machine. Has new firmware.

      Some candies definitely need the higher temperatures. Even on this batch you can see that the top and bottom trays, which tend to be a bit cooler, didn't get as big.
      A couple kinds of candies we tried still didn't do anything even at 150º😁

    Have you tried gummy worms? I tried the sour ones for 18th s and they did nothing

      Some gummies/candies do almost nothing, even at 150ºf (Candy Mode temperature) Different brands act wildly different.       Experimenting may be required to find the sweet spot 😇 for the results people are looking for when it comes to personal puffiness preference.

    So, u did them at 120 degrees for how many hours, do I need to do them at plz? your subscriber

      We do almost everything at 120ºf, but these did almost nothing until we went up to 140ºf.
      There are too many variables to tell someone how long a certain batch will take, however, most candy batches are quick, a few hours. There is very little water in candy. (if any)

    With only having about 2 yrs shelf life using the window bags, can’t their life be extended using those black bins? Also, under martial law (from what I heard), they can come into any home and take any weapons, electronics, and food for the greater good. How about some false walls?

      The bins that we have would make no difference; they are not air tight. We just never use the thin, clear front bags for anything we want to last longer than a few months.
      As far as the other issue, all bets would be off.

    Wait you took them out, weighed them, and then put them back for 10 hours even though they were done? 😂😂😂
    You should have sent down #1 child to bag them!
    I can understand the struggle when the food comes out of the freeze dryer and having to get them bagged up. I moved to putting single items into half gallon glass ball jars and sucking the air out with the food saver.
    My problem is RUNNING OUT OF ROOM FOR STORAGE!

      Well, the 10+ hours was the "2 hour" Dry Check to confirm they were dry. It just got *way* out of hand! 🤣 #1 child was 300 miles away and wouldn't be here for another week at the time and I thought I shouldn't wait *that* long! 😁
      Space sure does become an issue. We are technically out of space on our current racks. I say technically, because while there is an empty bin on the last rack, there are 3 full bins sitting on the floor needing space.

      I'm going to assume you're referring to freeze drying candy in general, and the fact that candy (sugar) does not need to be freeze dried for the purpose of preservation. Probably 100% true. 😁 A waste of energy? Yes. But candy in general is a waste.
      However, some candies are just a LOT better when freeze dried. For example, I don't even really like non-freeze dried skittles, but freeze dried they are great! And Bit-O-Honey! Wow those are _so_ much better after being freeze dried!
      And with these? They are better when freeze dried, but most important, #1 child asked for them before she came to visit.

    I have watched several of your videos and have a question.
    Why do you use the oxygen absorbers and not a vacuum pump to evacuate the oxygen?

      Good question!
      I'm not against vacuuming the bags, but If I were to do only one or the other, I would take the oxygen absorber only over the vacuum only. I'd have no issue with doing both, except cost of the chamber vac, time (maybe a minute per bag x thousands of bags), and the potential of crushing some delicate foods. I would always use oxygen absorbers for _long term_ storage, even when vacuuming because there is still going to be a tiny amount of air/oxygen between every particle of food. The oxygen absorbers will remove the oxygen _exponentially better._ Of course, both might be better. If the bag has a lower pressure on the inside vs the outside, there will be a pressure pushing the oxygen in. The long term problem is permeability - oxygen is going to be going through the bag, slowly, forever. The better the bag the slower it happens. If you have oxygen absorbers in the bags they keep absorbing any oxygen that comes through.
      With or without vacuuming the bag, because of the differences in oxygen partial pressures, oxygen will be coming in anyway.

    I know it is not on topic but for the life of me I can't figure out how to find how many batches I ran to check when to change/clean my oil. Newbie here.

      On my sister's newer machine (Late 2022) you just touch the middle of the screen - the words HarvestRight - and it takes you to a screen with the Batches Completed and the vacuum Pump Hours, etc.
      My older machine (Mid 2017) doesn't have that.
      Neither of us actually use the counter, we just keep a notebook with all our batches listed.

    Also do you think it would work using candy mode at 140 with tray warming for 20 minutes 12-14 hours?

      With the newer machines that have the candy mode (mine is older and does not have a candy mode), I would think it would work well. (Better and faster than mine) I would try a test sample at 150º and check the results to see if you like that even better. It also shouldn't need even 12 hours with the newer machines while in candy mode - probably a lot less.
      Experimenting may be required to find the temperature/time sweet spot 😇 for the results people are looking for when it comes to personal puffiness preference.

      I have a March 2023
      Medium size H/right
      I had just removed a tray of lemon heads ( mini )
      I used candy mode prewarm for 20 minutes
      150f and 12 hours
      And they were 90 percent unchanged and the remaining 10 percent was only mildly affected
      Not a pretty huge fail

      @@sandramontague4053 That really surprises me! Thanks so much for this information; I truly would have expected them to grow much bigger with those settings.
      With my machine, I don't have a "prewarm" setting so of course I couldn't do that step. I just precooled the freeze dryer, put the candies in, let them cool for a just a short time while I finished setting up for video, and then let it run. I could run another test to document the process more precisely if needed. I don't follow the candy batches as closely because I never think people will watch them. 😁
      Wait! I just noticed that you say that yours were the Mini ones!
      The ingredient list for the two candied have the ingredients in a different order, suggesting a slightly different proportions of those ingredients. A small change on their part can make a big difference on how they act.
      We've had some gummy candies (and other candies) do nothing or almost nothing, at any temperature we've tried, even though the labels say they are made from the same ingredients as ones that blow up like balloons!
