    Can we just take a moment to appreciate that Chelsea ate some chocolate chips and then put them away?! Just goes to show that you can learn how to control yourself without being restrictive. I LOVE how you left that in and show the rest of us your "imperfect" moments too...because there's no such thing as good food or bad food. Just science! ❤️

    What lovely people you all are. I've been vegan for 40+ years and boy is it hard to lose weight at my age. Especially as I love to bake. Lots of useful information in your videos that I will add to my repertoire. Wish me luck, I'm aiming to lose 30lbs!

    My motto or mantra has been “consistency”….”be consistent”….”stay consistent”. I’ve struggled to see the scale move yet I’ve felt that if people I know personally ate what I eat in a day, they’d lose weight. After watching some of your videos and Instastories I realize that consistency is my problem. I do really well then I might get a vegan donut on the weekend or I get into the habit of having banana nice cream (with cocoa and peanut butter) every night. So, when I was at Whole Foods today and wanted to get a donut I just thought “you need to be consistent”. I didn’t get the donut and I’m so glad I didn’t. NOW, I need to make this meal. Looks amazing. I appreciate how much you’ve upped the quality of your content lately. It shows.😊

    My favorite takeaway here was that I am not special/an exception to the science! I know this, logically, but mindset, right? Hearing it come from someone else helps me know my mindset is also not unique. It's all about mindset!!
    Sidenote:
    Butternut squash is my favorite, we grow it every year. Kobocha is a type of butternut I have yet to grow. Any way you dice it, it's delicious!

    In the US we call these kabuki squash too :). A butternut squash is different and is a pale tan color, is longer and thinner on one end and round on the other.

    I TURN AS ORANGE AS A PUMPKIN when I overeat squash, carrot, or orange sweet potato. lol--my go-to is now cauliflower, white sweet potatoes, greens, rice, and beans. I've eaten this way for about 14 years. Although calorie-density principles are absolutely true, after menopause, I cannot eat as many calories as before menopause. I exercise more now than then. It has a little to do with age and hormones, but calorie density has kept me fit and trim through the change that often makes women blow up like blimps. I use a marinade like that for all sorts of veggies. I go back and forth between components and full meals.

    Awesome video! I will try that marinade on my kabocha squash next time! Could you include more Korean recipes? I love Korean food and I’m so jealous you lived there for 9 months! Korean food is absolutely amazing but not that great for weight loss. I do use some sesame oil still and gochujang and I could never stop eating kimchi..

    I love doing components prepping. I get bored easy and this is the best way for my husband and I. Can’t wait to get pumpkin and try it this way! Also just wondering when I play your videos the music part is very loud and I have to keep turning my volume up and down. Only your videos do it. Was wondering why this is happens.     Your videos have really helped me, thank you! I’ve calorie counted before but it always seemed like I could eat barely any food for the amount of calories I was trying to consume, and I’d eventually end up quitting cus i felt like I wasnt even getting enough nutrients. It’s crazy how many veggies and potatoes I can eat and it’s sooo low in calories yet so nutritious! The whole calorie density thing really is eye opening. Thanks for helping me feel full ☺️

    Hey just to let you know kombucha and kabocha are two different things. Kombucha is a fermented fizzy tea drink and kabocha is what you have there. Its pronounced KA-BOH-CHA. It's a Japanese word so if you understand Japanese pronunciation that helps :)

    Holy moly, tried the butternut recipe and it is amazing, so tasty. Made sure to cut the pieces extra thin. And butternut is so cheap at the moment in NZ, definitely my favorite pumpkin, I was just thinking I need to learn to do different things with pumpkin and not just soup.

    I love to make big low cal soups, then freeze portions and bulk them up when reheating to my liking. It's fricken freezing here right now (Melbourne) so soups most days or nights, a shit tonne of pumpkin and broccoli also 😊😊 oh and potato's!!!! Lots and lots of potatoes!!

    Chelsea, I love your channel! Just wanted to help you with the name of that squash. In Japan, that kind of squash is called Kabocha. Kombucha is a fermented/cultured tea drink. Keep sharing!

    Love all your videos! In the US we call that an Acorn squash, similar to a Kabocha squash, but not quite the same. And I always leave the skin on, it’s the best!

      I agree about the skin. Lots of fiber!!! Not to be contrary, but I'm pretty that is a kabocha, and it's got a deeper orange interior than acorn squash, which would also probably work great in this recipe. They aren't common in US grocery stores, but I've been able to find them at my Asian and farmer's market. I think they have a richer flavor than acorn squashes.

    Hi Chelsea, my name’s Michele I’m from Australia. I have only started 4 days ago to fully embrace the calorie density lifestyle. I’ve been transitioning over to plant based for a while, so I’m ready(kind of) I’m struggling to get my head around trying to figure out the calorie density, we’re metric. How do you work it out? Also I haven’t eaten much carbs for a loong time, I believed it made me gain weight, so would I expect to gain in the beginning before my body settled into the new normal. I’m so tired of counting points and restricting myself and never staying at the same weight. I’m also coeliac, but I can get GF Oats . I’d be really grateful for your imput 🙏🙏😊😊

    Is the winter squash like that the buttercup part of the starch? Or veggie part of plate the squash always confuses me😊

    Hi Chelsea. So pleased I found you. I've been a 'naughty' vegan for about 12months and really need a kick up the butt to get myself back on track and on to a no oil wfpb diet. SO nice to see a kiwi girl too. (I'm in Akld). I have loved some of the other overseas channels but struggled to find recipes that I can identify with. This is mine and my families biggest hurdle, what to eat! I also note you said your hubby has MS. I have MS too. Has he noticed a change in his health eating wfpb? Sorry if I'm getting too personal.
