I have been cutting those steaks since 1989. You should only start the sweetheart steaks at around 6 inches in the ribeye. Not right off the small end.
I also would add some rose shaped steaks with the sweetheart steaks. I will not tell anyone how to make those because all my ideas are always stolen like the Texas shaped Porter house and United States shaped steak.
