- Join Chris Morocco in the Bon Appétit Test Kitchen as he makes molten caramel cake. Everybody has heard of molten chocolate cake, so we thought we’d try to create a caramel version, with a toffee-ish tender cake encasing a runny dulce de leche center.

Great explanation on the reason why you incorporated butter into the dulce, I find ppl tend to do something to a recipe without much explanation. Learnt something new today 👌
And the great thing was he took the time to show how sticky the caramel was after freezing, even WITH the butter, which illustrated his point beautifully.

Chris bothers Claire with tempered chocolate because she's making GOURMET sweets. This recipe, as well as many other recipes Chris makes, are aimed at a HOME COOK.

Those comments are all jokes, and even if they weren't things like making your own peanut butter or caramel are both pretty easy. Tempering chocolate is a bit trickier, but it's a question of practice not having equipment unavailable to the general public.

Bethany Platt when Claire made gourmet Reese’s Pieces, Chris insisted that she had to temper the chocolate, while everyone else in the kitchen was very confident she didn’t. Tempered chocolate is kind of a Chris meme now.

Bridget O - Claire's recent "Gourmet Chef" was about her recreating Reese's peanut butter cups. She asked a majority of the people in the kitchen if she should temper the chocolate, and they all said no. Except Chris. Thus creating the "Tempered" comments raid.
This is hands down the coolest recipe you guys have filmed! Love the way Chris presents when he cooks/ bakes and the ingenuity to put this together is fantastic.
I hope Chris doesn't mind all the jokes about tempered chocolate. I enjoy watching him, Molly, Carla, and Andy as much as watching Brad or Claire even if the comments are often fanboying only about the latter named ones. I love them all and appreciate all the posts on their social media too.

looks absolutely delicious, but i feel the need to be a bit pedantic, since i grew up with the main ingredient and make it myself at home: dulce de leche isn't "truly" caramel; it's caramelized milk.
the difference for those who don't know is that caramel uses water as a base, where dulce de leche uses milk as a base. just an fyi for people who might not be too happy with milk (i pity you).
This is dedicated to people who are lactose intolerant. Poor people.
Caramel uses sugar as a base not water as a base. Even when you include water as part of your caramel recipe (which isn’t necessary at all, but can be useful if you tend to burn caramel easily), that water has to be boiled off in order for the sugar to really start caramelizing. Until that happens the water is just holding the sugar back from getting hot enough to brown.
I agree though that dulce de leche isn’t caramel. They’ve got similar flavor profiles but are different enough that I don’t like it when one is subbed for the other.
@@xqueenfrostine hi, the base in this context is the liquid used to help caramelize the sugar. both dulce de leche and caramel are made in what is essentially the same way, and the key difference is that dulce de leche uses milk instead of water.

That Caramel Cake would go really great with some Bananas on the side (Bananas + Dulce de Leche = Match made in heaven) or a bit of vanilla ice cream.
But maybe, just maybe, covering it with tempered chocolate would be a nice touch to complete this cake.
