My headcanon is that poison resistance, with a focus on alcohol, is exactly where Miranda focused the leftover budget from the Lazarus Project when the Illusive Man told her she wasn't allowed to put a chip in Shepard. There honestly is no other explanation why Shepard is able to drink ryncol and survive. 🤣🤣Lawson did her homework, read the files and prepared. She fully expected this to happen.

This was the first time I decided to drink in the game and I remember my thought being. 'Wow, I finally decide to treat myself and fucking die.' Lmao I don't think I trusted drinking much more after that unless it was on the Normandy.

I still don't really understand how shepherd survived this. Pretty sure everything except the facial scars are 100% human.
For what.i get. He received some upgrades. Maybe some kind of poison resistence in the process? Would explain this and the sedative scene on the arrivel dlc...
The most common theory is that since it's unlikely his liver would be intentionally as deteriorated as it was for someone that age with that history of drinking, his body is just ever so slightly more likely to handle a poison that was intentionally made to be juuuuuuust a little over the lethality line.
It's a throwaway line, but someone mentions passive poison detection in omega, which hints that the poison used here might be just under the line to be detected but over the line to be likely to kill humans/batarians.
So that tiny little bit of new-ness might have been just enough to tip the scales in his favor.
The second most widely accepted theory is that shep is absolutely a krogan that got hit by a truck and reincarnated as a human with all the krogan-benefits from the first life. Besides this, he also set a high score from his n7 training where he is on an asteroid for way longer than he has food for. Kinda like having a nutrient hump. Is it stupid and nonsensical? Yes. Will I concede it's not way better of an explanation for half his crazy antics? Not even a little.
Shepard has some moderate cybernetic enhancements.
They even gave Shepard a slightly better biotic implant if your Shepard was a biotic.
Yes, all of the mechanical parts they implanted in Sheppard are completely human. Sarcasm aside, Sheppard is quoted to being peak human, like some kind of naturally born Captain America. That likely includes a high tolerance for toxic and foreign substances. They also survive the Prothean beacons, something that would probably fry like 99% of non-Prothean brains.
In short, Sheppard is just him.
