    Just a side note, if you leave the pastry in the fridge for about 2 hours instead of 1, it rolls out beautifully, instead of pressing it in. Today I made 2 quiches at work, and the pastry rolled out so easily.

      Please try this, it is so good, and you can roll the pastry as well. I made this at work a few days ago to rave reviews, and I made it gluten free, so I could try it.

    ❤ this pastry recipe. What a ripper. So easy to remember quantities and no rolling or pre cooking. Have snaffled it and is added to my collection 😅

    I’ve never heard of speck, it must be an Oz thing 🤷🏻‍♀️ looks yummy either way and I can’t wait to make this. I love quiche

      Me too, it's so yum, warm or cold. Speck is just cured ham very similar to bacon, you could just use bacon.
