Went rogue - too windy to BBQ in Dublin so I did this in the oven. Didn’t have half the ingredients so subbed with alternatives including, raspberry and black cherry conserve. Used Spanish cane honey, chipotle Salsa, dried chipotle flakes, Cajun mix in the sauce! - a whole smorgasbord of spices in the rub. Absolute gorgeousness - will do again - roll on Vaccines, roll on Summer. Thanks for the inspiration.
This has been one of my go-to recipes for the summer since you posted the original video. I’m making them tomorrow for a friend I’ve been teaching BBQ to. I’ve used the sauce for lollipops, wings, smoked chicken quarters, and mixed it with pulled smoked chicken for sandwiches. I love it so much I usually make a quadruple batch and freeze it in single portions. Excellent recipe. Also doing your soda pop carnitas on Sunday.
The bacon wrapped chicken legs look pretty darn good, but with that sauce it out-o-this-world! Just wondering, if you use bourbon in the sauce, what other liquid (if any) would you leave out? Thanks Chris, got this one saved to try this weekend.
