C/w Nana: Lao Sticky Shrimp Salad (ລາບກຸ້ງແຫຼວ == Larb Goong Leow)

  • This is my sticky shrimp larb. Lao fish and seafood larb is usually called "larb leow" (not 'neow' -- the title sequence in the video has a typo -- sorry) because the meat is chopped up until it becomes a sticky paste. The "leow" part is to distinguish from the other style that is used with non-seafood meat [chicken, beef, pork] where the meat is grilled and minced.
    Most people would just call this "ລາບກຸ້ງ == Larb Goong," without the "leow". If you want chunky fish salad, that is called "Ghoi." I have "Ghoi Pa" video here: • C/w Nana: Lao Raw Fish...

      +FDchick So cook it prior to the pounding? Would you place it in the stock pot?
      These recipes are so foreign to me. I'm glad that Nana shares this side of her cuisine. I am learning a lot from her channel.

      +MsLansones if you don't want to eat the shrimp raw, you heat it in a saucepan without oil after pounding and seasoning.

    Yay a new video! Can you do some more Lao desserts? I don't remember what its called but it looks like a two layer jello. The bottom I think is coconut milk and the top is kind of clear. Love your videos! I made so many of your recipes the last couple of days!

    Thank you for your reply, I think I will do the same old traditional way then, I can flex my muscles too. My aunt/uncle/cousins live in Sacramento too. Some of them will go to grand opening pop-up restaurant on March 26th, Lanxang Kingdom.

    thanks you so much pa nana for making this site ... I'm lao , never learn much lao cooking as my mom doesn't really cook lao food for us , but i love eating lao food , especially the food old people eat ( hard to make ) so i usually go to lao temple when i crave lao food ...now I'm gonna learn to cook it by myself!       Yes, these shrimp were frozen, but if you have fresh ones that's ok too.

    Nana, can I use food processor for this recipe? I used to make this dish at my aunt's house, it was a lot of arms work out. I want to make it at my own home but try it with food processor.

      I tried using food processor, but it was too messy, so I stuck with the traditional way that I showed in the video. Maybe you will have better luck with it.

      Michelle, I got my ring from Kay Jewelers at Modesto mall. There's a nice Lao man who works that. I forgot his name. I haven't been there in a long time. Not sure if he's still there.

    I made this! It was SOO good. It was torture waiting for the rice to dry out enough to roast and grind up. I knew I was going to do cooked version so instead of smashing the shrimp so much, I did it roughly chopped. It turned out so authentic, I couldn't believe it!

      Frozen Bliss I don't remember where I got the chopping board, but the knives are Kiwi brand. They sell them at Asian markets. They are very inexpensive, but I like them.
